Ingredient Notes & Substitutions
Tofu Turkey Ingredients
- Super Firm Tofu: look for super firm tofu, this is the vacuum packed tofu that is pre-pressed. This tofu holds up significantly better than any other firmness level. If you can't find super firm, use extra firm instead
- Soy Sauce, Tamari, or Liquid Aminos: this adds salty flavor. For gluten-free, use tamari or liquid aminos
- Maple Syrup or Agave: for a bit of sweetness
- Italian Seasoning, Sage, Parsley: this is the real magic of the tofu turkey. The flavors of the herbs are those that we associate with turkey, so the tofu takes on a more turkey-like vibe
- Extra Virgin Olive Oil: for cooking, optional

Sandwich Ingredients
- Baguette: I recommend a soft baguette that you find wrapped in plastic or hoagie style rolls, not hard crusted bread
- Vegan Mayo: for a WFPB option use my homemade plant-based mayo, or use store bought vegan mayo
- Vegan Mozzarella or Provolone Cheese: optional if you like cheese on your sandwiches. I recommend Violife for non melting cheese uses, as it tends to have fairly clean ingredients.
- Tomato: I used a heirloom tomato but a regular on-the-vine or beefsteak tomato is great too
- Red Onion
- Shredded Lettuce: I used green leaf lettuce, but any lettuce works
- Dill Pickle Slices: or your fav pickle. I really like bread & butter pickles, so I often reach for those
- Banana Pepper Rings: I think the banana pepper is what makes the sandwich. It feels like something you get at a sandwich chain, and even if you aren't the biggest banana pepper fan, I recommend trying them on your sandwich.
- Red Wine Vinegar: for drizzling

Step-By-Step Instructions
Step 1. Cook the tofu. In a small bowl whisk together the soy sauce, maple syrup, Italian seasoning, sage, and parsley. Heat the oil in a large skillet over medium heat. Add the tofu and cook for 4-5 minutes per side until golden (if your pan is smaller you may need to do this in two batches to get each piece cooked on both sides). Add the sauce and cook another 5-7 minutes, stirring occasionally, allowing the sauce to cook off completely.

Step 2. Assemble the sandwich. Spread the bottom of the baguette with mayo. Add the cooked tofu, the cheese, if using, followed by the lettuce, tomato, onion, banana pepper, and pickles. If desired, finish with a drizzle of red wine vinegar. Close up the sandwich and slice into 3-4 servings.

Seasoning and slicing are key. In this recipe we slice the tofu thinly, and season with turkey flavor cues to mimic deli flavor.

Tofu Turkey
- 1 16 Ounce Block Super Firm Tofu
- 1 Tablespoon Extra Virgin Olive Oil optional
- 2 Tablespoons Soy Sauce
- 2 Tablespoons Maple Syrup or Agave

- 6 Slices Vegan Mozzarella or Provolone Cheese optional
- 1 Large Heirloom or Vine Tomato thinly sliced
- ¼ Small Red Onion thinly sliced
- 1 Cup Finely Shredded Lettuce
- ½ Cup Dill Pickle Slices
- ¼ Cup Banana Pepper Rings
- Red Wine Vinegar
