Ingredients

  • 1 Medium Yellow Onion small diced
  • 1 15 Ounce Can Black or Pinto Beans DO NOT DRAIN
  • 1 Bay Leaf
  • 1 Medium Chipotle Chili in adobo sauce
  • 2 Cloves Garlic minced
  • Juice of ½ Lemon
  • Juice of ½ Lime
  • 1 Teaspoon Salt
  • 1 Teaspoon Dried Oregano
  • ½ Teaspoon Cumin

Instructions

  • Heat a large nonstick skillet over medium heat. Add the onion and sauté for 3-5 minutes until turning soft and translucent.
  • Add the beans, including the liquid from the can, bay leaf, chili, garlic, lemon juice, lime juice, salt, oregano, and cumin. Cook on medium heat, stirring occasionally, for 5-10 minutes, or until the bean liquid has thickened.
