1 Medium Poblano or Green Bell Pepper diced 1 Small Yellow Onion diced 2 Medium Roma Tomatoes diced 2 Tablespoons Tomato Paste 2 Cloves Garlic minced 2 Medium Chipotle Chiles in adobo sauce 1 Teaspoon Cumin 1 Teaspoon Salt ¼ Teaspoon Black Pepper ¼ Cup Water 1 Tablespoon Extra Virgin Olive Oil optional 1 16 Ounce Block Super Firm Tofu
Heat a large skillet over medium heat, add the onion and pepper and cook 3-5 minutes, until the onion is translucent.
Add the tomato, garlic, tomato paste, chipotle chile, cumin, salt, pepper, and water. Cook another 2 minutes.
Transfer to a blender and blend until smooth.
Meanwhile, heat the oil in same skillet over medium high heat. Use your hands to crumble the tofu into the pan. Cook 5-6 minutes, until golden brown.
Pour in the sauce and cook another 2-3 minutes until the tofu is well coated. If desired, add extra water to your preferred texture.
