Why this recipe works
Chipotle lists ALL their ingredients for every single food they sell right on their website.
I took the exact ingredients that they list and developed a home-cook method for sofritas.
Chipotle makes their own tofu, but we'll use a block of pre-pressed super firm tofu to speed things up. Then we'll just do a quick sauté of their list of veggies to blend into a sauce.
This homemade sofritas recipe has the exact flavors of Chipotle, just in a home cooked setting!

What Are Sofritas?
Sofritas are a seasoned tofu dish, made popular by Chipotle.
Crumbled tofu is cooked in a sauce of peppers, tomatoes, and a few spices. It's a tomato-y, spicy plant-based protein that is delish in burrito bowls, tacos, and more!
This homemade version takes inspiration from Chipotle's sofritas while using a blended sauce made from sautéed vegetables and chipotles in adobo.

Ingredient Notes & Substitutions
- Poblano or Green Bell Pepper: I love poblanos here! They are slightly spicy and add a nice underlying heat to the dish. If you can't find poblanos or want a lower spice option, use a green bell pepper instead (though labeled as slightly spicy, I do not find poblanos to contribute a significant heat level)
- Yellow Onion: feel free to use a red or white onion instead
- Roma Tomatoes: romas are great in this dish, and I use them in several other of my Chipotle inspired recipes. But feel free to sub another larger tomato like a beefsteak
- Tomato Paste: for even more intense tomato flavor
- Garlic
- Chipotle Chiles: use canned chipotle chiles in adobo sauce (often found in the canned or Mexican foods section)
- Spices: cumin, salt, pepper
- Water: a little water helps to blend the sauce together - feel free to add more to your desired liquid level
- Extra Virgin Olive Oil: optional, to sauté the tofu
- Super Firm Tofu: look for super firm tofu - this is the vacuum packed tofu that is pre-pressed. This tofu holds up significantly better than any other firmness level. If you can't find super firm, use extra firm instead

Step-By-Step Instructions
Step 1. Heat a large skillet over medium heat, add the onion and pepper and cook 3-5 minutes, until the onion is translucent.

Step 2. Add the tomato, garlic, tomato paste, chipotle chile, cumin, salt, pepper, and water. Cook another 2 minutes.

Step 3. Transfer to a blender and blend until smooth.

Step 4. Meanwhile, heat the oil in same skillet over medium high heat. Use your hands to crumble the tofu into the pan. Cook 5-6 minutes, until golden brown.

Step 5. Pour in the sauce and cook another 2-3 minutes until the tofu is well coated. If desired, add extra water to your preferred texture.

Ways to Serve Vegan Sofritas
Use these sofritas anywhere you'd use a flavorful taco filling:
- Burrito Bowls: Rice, black beans, corn, salsa, guacamole
- Tacos: add lettuce, avocado, cilantro, and lime
- Burritos: wrap with rice, beans, salsa, and vegan cheese
- Tostadas: layer over crispy tortillas with refried beans
- Salads: add to lettuce with your favorite Mexican-inspired toppings
- Quesadillas: fold vegan into tortillas

Elizabeth's Kitchen Notes
- Spice Level: I found that two chipotle chilis creates the right amount of spice. You can tell the dish is spicy but your mouth is not on fire. If you like heat, feel free to up the number of chipotles. Or omit for a spice-free version.
- Tofu: I always reach for super firm tofu and I highly recommend it in this dish. It effortlessly makes the perfect Chipotle-style sofritas texture
- Water: Chipotle often adds extra water to their sofritas when reheating or stocking up, so you'll find that Chipotle's sofritas are quite watery compared to my recipe. If you really love the watery texture, feel free to stir in more water. I personally found just the quarter cup listed below to be the perfect amount
FAQ & Expert Tips
Traditional sofritas are made with tofu, so the dish itself is naturally plant-based. This homemade version is completely vegan.
They're inspired by Chipotle's sofritas, using the exact ingredients listed on their site. I don't know their method of cooking, so the method is completely mine - adapted for an average home cook.
Reheat in a skillet on low or in the microwave. If the tofu seems dry, add a small splash of water.

Homemade Sofritas (Chipotle Copycat)

- 1 Medium Poblano or Green Bell Pepper diced
- 1 Small Yellow Onion diced
- 2 Medium Roma Tomatoes diced
- 2 Tablespoons Tomato Paste
- 2 Cloves Garlic minced
- 2 Medium Chipotle Chiles in adobo sauce
- 1 Teaspoon Cumin
- 1 Teaspoon Salt
- ¼ Teaspoon Black Pepper
- ¼ Cup Water
- 1 Tablespoon Extra Virgin Olive Oil optional
- 1 16 Ounce Block Super Firm Tofu
