Ingredients
3LargeYukon Gold Potatoespeeled and sliced into sticks
2TablespoonsWater or Extra Virgin Olive Oil
2TeaspoonsPaprika
1TeaspoonOregano
1TeaspoonGarlic Powder
½TeaspoonOnion Powder
¼TeaspoonBlack Pepper
1TeaspoonSalt
To Serve
Lemon Wedges/Slices
½CupFetaI used vegan feta
1-2TablespoonsChopped Parsley
1-2TablespoonsChopped Dill
Instructions
Preheat the oven to 425°F.
Slice potatoes into matchsticks and pat dry with a paper towel. For best results let sit 10-15 minutes on paper towels to dry.
Transfer the potatoes to a large bowl. Add the oil, paprika, oregano, garlic powder, onion powder, and pepper (do NOT add the salt). Toss well.
Transfer to a baking sheet and arrange in several rows, allowing a small amount of space between each stick.
Bake for 20 minutes, turn each fry, then bake another 15-20 minutes, until the fries are golden.
Let cool slightly, then sprinkle on the salt and toss.
Transfer to your serving dish/tray. Top with herbs, cheese, and lemon.
