    Loaded Greek Feta Fries are crispy homemade fries, tossed with bold seasonings, and loaded up with feta, fresh herbs, and lemon. They're the perfect appetizer or side dish.

    On a recent family vacation, we stopped at a restaurant for a quick lunch and ended up in a delightful authentically Greek place with tons of vegan options and downright delicious food.

    One of the menu options was greek fries, which we all enjoyed. I loved the flavor and decided to make a version for myself.

    These fries are tossed with a few Greek-inspired spices, and then loaded up with herbs, feta, and a squeeze of lemon juice. Delish!

    Ingredient Notes & Substitutions

    • Yukon Gold Potatoes: I chose yukon gold potatoes because of how creamy and soft they get. They make the most delicious, tender fries. That said, because of the tenderness, there are a few extra steps to make sure we get the perfect balance of crisp on the outside and soft on the inside. Details below!
    • Extra Virgin Olive Oil: toss with EVOO for extra crisp, or omit for an oil-free version. The potatoes naturally have quite a bit of liquid, so no need to add extra water like I do with other oil-free fry recipes.
    • Spices: paprika, oregano, garlic powder, onion powder, black pepper, salt

    To Serve

    • Lemon Wedges/Slices
    • Feta: I used follow your heart vegan feta
    • Fresh Herbs: parsley & dill

    Step-By-Step Instructions

    Step 1. Preheat the oven to 425°F.

    Step 2. Slice potatoes into matchsticks and pat dry with a paper towel. For best results let sit 10-15 minutes on paper towels to dry.

    Step 3. Transfer the potatoes to a large bowl. Add the oil, paprika, oregano, garlic powder, onion powder, and pepper (do NOT add the salt). Toss well.

    Step 4. Transfer to a baking sheet and arrange in several rows, allowing a small amount of space between each stick.

    Step 5. Bake for 20 minutes, turn each fry, then bake another 15-20 minutes, until the fries are golden.

    Step 6. Let cool slightly, then sprinkle on the salt and toss.

    Step 7. Transfer to your serving dish/tray. Top with herbs, cheese, and lemon.

    What to Serve with Greek Feta Fries

    • Alongside falafel burgers
    • Or with regular falafel or beetroot falafel
    • Dipped in hummus
    • Drizzled with vegan tzatziki
    • As a spread with mediterranean nachos

    Elizabeth's Kitchen Notes

    • Yukon vs. Russet: many fry recipes you see online use russets, and they are definitely an easier potato to work with. But for super creamy fries, Yukons are a better choice. Because they have more liquid, you do need to pat them dry thoroughly before cooking. If you want to skip this step, opt for russet potatoes instead.
    • Dry time: you *must* let Yukon gold potatoes dry thoroughly before baking. If you don't the fries will end up quite limp and soggy no matter how long you bake them.

    FAQ & Expert Tips

    Can I air fry these fries?

    Yes! Air frying is a great option for achieving crispy edges. Start with 10 minutes per side, and go up from there depending on your air fryer.

    Can I make these ahead of time?

    I recommend making these just before serving for best results. If you have an air fryer, this is the best method for reheating, if you do decide to prep ahead.

    Store in an airtight container in the fridge for up to 5 days.

    • 2 Teaspoons Paprika
    • 1 Teaspoon Oregano

    • 1 Teaspoon Salt
