This Spinach Blueberry Salad is a fresh and fruity salad with quinoa and almonds. It's a great salad for warm summer weather and perfect to feed a crowd.

Ingredients

  • 4 Cups Spinach
  • Cup Dry Quinoa
  • 1 Medium Cucumber
  • ½ Cup Blueberries
  • ¼ Cup Blackberries
  • ¼ Cup Sliced Almonds

Balsamic Dressing

  • 3 Tablespoons Balsamic Vinegar
  • 3 Tablespoons Water
  • 2 Tablespoons Maple or Date Syrup
  • 1 Tablespoon Dijon Mustard
  • ¼ Teaspoon Salt
  • Teaspoon Pepper

Instructions

  • Cook the quinoa. Rinse the dry quinoa, then add it to a small pot with 1 ¼ cups of water. Bring to a boil then simmer for 15 minutes.
  • Make the dressing. In a small bowl, mix the balsamic vinegar, water, maple syrup, dijon mustard, salt, and pepper.
  • Slice the cucumber.
  • Assemble the salads. Toss the spinach with the quinoa, cucumber, blueberries, blackberries, almonds and dressing. Enjoy!
