Celebrate Halloween with these Vegan Almond Joy Bars. These gluten free and dairy free bars are creamy and delicious. A plant-based version of the classic candy bar.

Ingredients

  • 4 ½ Cups Shredded Coconut
  • 1 ½ Cups Almond Powder or Almond Flour
  • Cup Maple Syrup
  • 2 Teaspoons Vanilla
  • ¼ Teaspoon Kosher Salt + more for topping
  • 10 Ounces Vegan Dark Chocolate
  • 24 Raw Almonds

Instructions

  • Line an 8x8" baking pan with parchment paper.
  • Add the coconut, almond powder, maple syrup, vanilla, and salt to a food processor and blend until smooth.
  • Press the mixture into the prepared pan and place in the freezer for 10 minutes to solidify.
  • Remove the pan from the freezer and slice the dough into bars (I made 24 bars). Place the bars back in the freezer for a few minutes while you melt the chocolate.
  • Melt the dark chocolate in a microwave-safe bowl on 50% power, stirring every 30 seconds until the chocolate is smooth.
  • Dip each bar in the chocolate then immediately top with a whole almond and a sprinkle of salt. Place on a wire rack over a baking sheet to drip.
  • Return the bars to the freezer for 5-10 minutes to solidify. Serve and enjoy! Store leftovers in the fridge or freezer.
