Ingredients

  • 1 Recipe Vegan Greek Meatballs or store-bought meatball of choice
  • 2 Cups Dry Pearl Couscous or grain of choice
  • ½ Head Lettuce chopped
  • 2 Baby Cucumbers cut into chunks
  • 2 Medium Roma Tomatoes chopped
  • ½ Small Red Onion sliced
  • ½ Cup Vegan Feta
  • Hummus
  • Tzatziki
  • Fresh Mint or Dill
  • Lemon Wedges

Instructions

  • Prepare the meatballs. Head here for full instructions to my homemade vegan greek meatballs.
  • Cook the couscous according to the package instructions.
  • If using homemade, prepare my oil-free hummus and/or my plant-based tzatziki.
  • Assemble the bowls. Place a bed of couscous and lettuce in each bowl. Add tomato, cucumber, red onion, and vegan feta. Top with the cooked meatballs. Drizzle with tzatziki and/or hummus. Garnish with a sprig of fresh mint and a lemon wedge.
