    These Vegan Greek Couscous Bowls are a Mediterranean flavored dinner, loaded with pearl couscous, homemade vegan Greek meatballs, veggies, hummus, and tzatziki. Great for meal prep!

    I love a good bowl these days. They are great for meal prep. You get tons of fresh veggies, carbohydrates, and protein. And you can pick and choose your favorite toppings. Turn it into a full on salad or a total grain bowl. Endlessly versatile!

    These Greek bowls are a Mediterranean flavored spin! With my vegan Greek meatballs, homemade hummus, and dairy free tzatziki!

    Ingredient Notes & Substitutions

    • Vegan Greek Meatballs: make my Vegan Greek Meatballs which are a plant-based bean meatball, loaded with protein and Greek herbs and spices. You can also use a store-bought meatball of choice or the seasoned tofu from my vegan gyros.
    • Pearl Couscous: pearl couscous makes a fab base for these bowls. I can't get enough! If you need gluten-free, choose rice instead - brown rice would be perfect in these bowls.
    • Lettuce: I like adding lettuce to my bowls - it's not quite a salad, but lettuce gives a nice base alongside the couscous. Feel free to skip if you want more of a rice bowl vibe.
    • Cucumbers: I use baby cucumbers, but feel free to use a regular or English
    • Roma Tomatoes: you can also use cherry tomatoes
    • Red Onion
    • Vegan Feta: optional, but definitely gives Mediterranean vibes. I typically use the Follow Your Heart brand
    • Hummus: make my homemade oil-free hummus - you wouldn't know there's no oil, it's so creamy and delicious
    • Tzatziki: it's quite hard to find vegan tzatziki so I make my own plant-based Tzatziki using vegan Greek yogurt for extra protein!
    • Fresh Mint or Dill
    • Lemon Wedges

    Other fun additions:

    • roasted chickpeas

    Step-By-Step Instructions

    Step 1. Prepare the meatballs. Head here for full instructions to my homemade vegan greek meatballs.

    Step 2. Cook the couscous according to the package instructions.

    Step 3. If using homemade, prepare my oil-free hummus and/or my plant-based tzatziki.

    Step 4. Assemble the bowls. Place a bed of couscous and lettuce in each bowl. Add tomato, cucumber, red onion, and vegan feta. Top with the cooked meatballs. Drizzle with tzatziki and/or hummus. Garnish with a sprig of fresh mint and a lemon wedge.

    Meal Prep Tips

    These bowls are ideal for make-ahead lunches/meal prep. For the freshest, best-tasting bowls every time:

    • Store hummus and tzatziki separately
    • Keep lettuce and veggies separate until assembling
    • Reheat only the couscous and meatballs

    Can I make these bowls ahead of time?

    Yes! They're excellent for meal prep. Just store the couscous and meatballs separately from the fresh ingredients.

    What protein can I substitute for the meatballs?

    My seasoned tofu recipe from my vegan gyros is great. My falafel or tofu falafel recipes are also great alternatives.
