Vegan Grilled Chicken Skewers (with Tofu)

These Vegan Grilled Chicken Skewers are perfect for summer grilling. These tofu skewers get a simple herby marinade. Add some veggies, skewer, and grill for a delicious plant-based dinner.

Ingredients

  • 1 16 Ounce Block Super Firm Tofu cut into 2" cubes
  • ¼ Cup Agave
  • 3 Tablespoons Soy Sauce
  • 2 Tablespoons Minced Fresh Parsley + more to serve
  • 1 Tablespoon Italian Seasoning
  • 1 Medium Bell Pepper cut into 1.5" pieces
  • 1 Medium Yellow Onion cut into 1.5" pieces
  • 1 Medium Zucchini cut into 1" rounds
  • Limes

Instructions

  • Soak the skewers in water.
  • In a small bowl whisk together the marinade ingredients.
  • Slice the block of tofu into 1-1.5" cubes.
  • Skewer the vegetables and tofu. I added two pieces of tofu and one piece of each vegetable to each skewer.
  • Brush the skewers on all sides with half of the marinade mixture.
  • Grill on medium high (500°F on air grill) for 4-5 minutes, brush with additional marinade, rotate and grill another 4-5 minutes.
  • Serve over pitas, with a squeeze of lime juice.
