Vegan Grilled Chicken Skewers (with Tofu)

These Vegan Grilled Chicken Skewers are perfect for summer grilling. These tofu skewers get a simple herby marinade. Add some veggies, skewer, and grill for a delicious plant-based dinner.

1 16 Ounce Block Super Firm Tofu cut into 2" cubes ¼ Cup Agave 3 Tablespoons Soy Sauce 2 Tablespoons Minced Fresh Parsley + more to serve 1 Tablespoon Italian Seasoning 1 Medium Bell Pepper cut into 1.5" pieces 1 Medium Yellow Onion cut into 1.5" pieces 1 Medium Zucchini cut into 1" rounds Limes
Soak the skewers in water.
In a small bowl whisk together the marinade ingredients.
Slice the block of tofu into 1-1.5" cubes.
Skewer the vegetables and tofu. I added two pieces of tofu and one piece of each vegetable to each skewer.
Brush the skewers on all sides with half of the marinade mixture.
Grill on medium high (500°F on air grill) for 4-5 minutes, brush with additional marinade, rotate and grill another 4-5 minutes.
Serve over pitas, with a squeeze of lime juice.
