Plant-based food doesn't lend itself to grilling as easily as meat. So in the past I've strayed away from reaching for a grill-forward recipe like skewers. But with super firm tofu you can make a good skewer that stays together nicely on the grill.
These vegan grilled chicken skewers are simple skewers with tofu and veggies. To create chicken vibes, I use my easy marinade of agave, soy sauce, and Italian seasoning.
Like other grilling recipes, tofu and veggies take only a few minutes on the grill.
The result is a loaded veggie skewer with a lovely brown char. Perfect for a hot summer night.

Ingredient Notes & Substitutions
- Super Firm Tofu: look for super firm tofu, this is the vacuum packed tofu that is pre-pressed. This tofu holds up significantly better than any other firmness level. If you can't find super firm, use extra firm instead
- Bell Pepper: I used a green pepper, but pick your favorite color
- Yellow Onion: or a red onion
- Zucchini: or summer squash
- Limes: for a squeeze of freshness at the end

Marinade Ingredients
- Agave: you can also use maple syrup
- Soy Sauce: for gluten-free, use tamari or liquid aminos
- Minced Fresh Parsley: I like the fresh parsley here because it really brightens up the dish. But feel free to use dried parsley as a sub
- Italian Seasoning: this is my secret to getting tofu to taste more like chicken - we associate these flavors with chicken

Step-By-Step Instructions
Step 1. Soak the skewers in water.

Step 2. In a small bowl whisk together the marinade ingredients.

Step 3. Slice the block of tofu into 1-1.5" cubes.

Step 4. Skewer the vegetables and tofu. I added two pieces of tofu and one piece of each vegetable to each skewer.

Step 5. Brush the skewers on all sides with half of the marinade mixture.

Step 6. Grill on medium high (500°F on air grill) for 4-5 minutes, brush with additional marinade, rotate and grill another 4-5 minutes.

Step 7. Serve over pitas, with a squeeze of lime juice.

Pro Tip: Don't overcrowd the skewers. Leave a bit of space between each veg so the heat can circulate.
Best Vegetables for Grilled Tofu Skewers
These skewers are easy to customize depending on what you have or what you like. Great additions include:
- mushrooms
- cherry tomatoes
- yellow squash
- red onion
- pineapple
Try to cut everything into similarly sized pieces so the skewers cook evenly.

How To Keep Tofu From Sticking to the Grill
Tofu can stick easily if the grill isn't hot enough.
For best results:
- Preheat the grill fully before cooking
- Lightly oil the grill grates if desired
- Use super firm tofu for the best texture
- Let the tofu cook undisturbed before flipping
The tofu will naturally release more easily once it develops grill marks.

FAQ & Expert Tips
Yes. Roast in the oven at 450 until the tofu is golden and the vegetables are tender.
I highly recommend super firm tofu (vacuum packed) because it is the most firm and will not fall apart when skewered.
Store in an airtight container for up to a week. You can remove from the skewers or leave the veg on.
