I don't really drink alcohol these days, but I LOVE making NA versions of classic drinks. There's something about a fun bubbly beverage that you just shouldn't have to give up if you don't want the alcohol.

Why this recipe works
The classic aperol spritz recipe is 3 ounces of aperol, 3 ounces of prosecco and 1 ounce of club soda. For this mocktail version, we'll match those ratios.
The aperol substitution, orange juice and grapefruit juice, totals 3 ounces. And our prosecco sub, san pellegrino, also totals 3 ounces. Plus the extra ounce of san pellegrino for the final ounce of club soda.
I also add a bit of of apple cider vinegar for that classic alcohol bite.

Ingredient Notes & Substitutions
- Orange Juice: the orange juice and grapefruit juice replace the flavor of the Aperol. Fresh squeezed has the best flavor, but a store bought juice works well too!
- Grapefruit Juice: you can sub the grapefruit juice with blood orange or pomelo, or just more orange juice
- Apple Cider Vinegar: I often use apple cider vinegar to replace alcohol in my mocktails. Of course, we won't use an entire shot's worth - just enough for the bite
- Ice
- San Pellegrino: I used san pellegrino for the classic Italian vibe. Feel free to use regular seltzer water or other club soda/sparkling water. Or switch it up with an orange seltzer.
- Orange Slices: for garnish
