When I was going into the office every day, my favorite meal prep was baked sweet potato slices. They take five minutes of prep, then you just throw them in the oven while you're doing other meal prep or whatever else you're doing.
And baked sweet potato rounds are so tasty! They are great just by themselves, but pair well with sauces, on salads, or in rice bowls.
My roasted Japanese Sweet Potato Rounds have been one of my favorite foods since I first discovered the Japanese sweet potato. And these roasted sweet potato slices are the regular-sweet-potato version.

Why I loved Baked Sweet Potato Slices
- Dietary needs - these potato rounds are vegan, gluten-free, dairy-free, oil-free, and sugar free
- Really simple - with just one ingredient these potato wedges could not be more easy
- Meal prep - these potatoes are great to prep days in advance and enjoy as a healthy side or snack

Ingredient Notes
- Sweet Potatoes: look for similarly sized sweet potatoes to get even sided rounds
- Olive Oil Cooking Spray: this is optional. I don't use oil when roasting sweet potatoes and I love the delightful sweet, caramelized flavor they take on. Oil can make the potatoes a bit crispier.
- Parsley: optional, but parsley adds a nice burst of freshness at the end

Step-By-Step Instructions
Step 1. Preheat the oven to 425°F. Line two baking sheets with parchment paper.
Step 2. Thinly slice the sweet potatoes (between ¼ cm and ¾ cm).

Step 3. Arrange on a baking sheet and bake for 50-60 minutes. Flip halfway through. Enjoy!

FAQ & Expert Tips
I don't peel mine - the skin is tasty and has fiber! But feel free to peel if you prefer.
Yes! Sweet potatoes grow in the ground, like regular potatoes and should be cleaned to remove dirt and any fertilizer left over. Even if my potatoes look clean, I at least wipe them down with a wet paper towel to remove any excess dirt.
If you peel your sweet potatoes, there is no need to pre-scrub.
Make sure you arrange your potatoes in one layer (even if that means multiple baking trays!) This helps them cook evenly, more quickly, and get crispy.
For sweet potato rounds, the crispiness comes from the thickness of the round. A thinner round will be more crisp, so make sure to carefully cut your sweet potatoes before baking.
To troubleshoot if you've already cut and baked. Spray the potatoes with cooking spray, turn the oven up to 450°F, and bake another 10-15 minutes.
Store these potatoes in an airtight container in the fridge. They will last up to a week.
You can reheat baked sweet potato rounds in the microwave, or pop them back into the oven or air fryer at 350°F for 10 minutes, until warm.
