    How do you normally take your coffee? Personally, I'm a black coffee gal. Call me crazy but I don't drink coffee for the caffeine, I drink it because I like the taste. I love a warm mug of coffee on a cold morning or an iced cold brew in the heat of summer.

    I know there's a lot of controversy about the benefits of coffee. Some say we shouldn't drink coffee at all. Others say that as long as we drink less than 4 cups a day, we're fine. Others say that we should drink it only before noon. Caffeine has been associated with weight loss but it can heighten symptoms of anxiety. If we add sugar or cream we could be unknowingly adding hundreds of calories a day. Let's not talk about some of the drinks at Starbucks.

    With all the debate, I think there's only one thing we can do: listen to our bodies. I've found that I gain genuine enjoyment and pleasure from drinking coffee in the morning. But I also have anxiety. So I started drinking decaf. I still get my coffee taste and a bit of caffeine, but I don't feel the negative effects of caffeine on my body. I do what works for me and I encourage you to do what works for you!

    Healthy Creamer

    I know I said I like my coffee black. But sometimes I like to change it up. So I make Cashew Coffee Creamer. This creamer is a healthy alternative to dairy products. It is thick and creamy just like dairy cream, but it's healthy.

    Dairy products are filled with insulin-like growth factor 1 (IGF1). When humans ingest IGF1 we experience the same growth that causes baby cows to grow to become hundreds of pounds.  This is great for cows but not so great for us. IGF1 causes cancer. Not good!!

    This Cashew Coffee Creamer is just as delicious (if not more delicious) than dairy cream but without all the negative side effects.

    How to make Cashew Coffee Creamer

    Cashew Coffee Creamer is made with -- you guessed it -- cashews! When you soak cashews in water they become soft. You can then blend the cashews with some plant milk, vanilla, and date syrup for a creamy liquid with a hint of sweetness.

    Use this Cashew Coffee Creamer in coffee, tea, Turmeric Lattes, Peppermint Mochas, or any time you want a sweet cream. Enjoy!

    Ingredients

    • 1 Cup Raw Cashews
    • 1 Cup Unsweetened Almond Milk
    • 1 Teaspoon Vanilla Extract
    • 2 Teaspoons Date Syrup +/- to taste

    Instructions

    • Cover the cashews in boiling water and soak until soft, around 50 minutes.
    • Drain the cashews then place all ingredients in a blender or food processor and blend for a minute or two, until the mixture is smooth. Taste and adjust sweetness as necessary. Use in place of milk or cream in coffee or other beverages. Store in the refrigerator. Enjoy!
