    Cookie Monster Chickpea Cookie Dough is a delicious and fun dessert. This plant-based cookie dough is completely edible as-is, and sugar-free!

    Let me get the obvious questions out of the way first...

    ...yes, this cookie dough is blue.
    ...it's made from whole food, plant-based ingredients.
    ...it's completely vegan, refined sugar-free, and gluten-free.

    So, in short, this Cookie Monster Chickpea Cookie Dough the most fun and healthy dessert you could ever imagine.

    What makes this cookie dough amazing is that you can just take a spoon to the entire batch and not feel at all bad about eating the dough before you baked the cookies. Because you were supposed to eat the dough!

    Also, you still get to eat baked cookies. Because, in true Cookie Monster style, you need actual cookies. What a win - cookie dough and cookies.

    What makes the cookie monster cookie dough blue?

    This is the best not-so-secret secret about this recipe! There's NO food dye involved. No chemicals. Nothing.

    The 'secret' is blue spirulina. It's naturally a deep, bright blue and it's perfect for creating a beautiful Cookie Monster blue.

    What is blue spirulina?

    Spirulina is a blue-green algae. It is a bacteria that is high in protein, filled with B vitamins, and high in other nutrients like copper and iron. It's considered a health food because of its high nutrient content.

    You can get spirulina in pills or tablets, but for this recipe we'll use spirulina powder. Spirulina comes in two different colors - for this blue recipe we'll use blue spirulina.

    If you're a little concerned about putting algae in your cookie dough, don't worry. You can't taste it at all! It just turns the dough a beautiful Cookie Monster blue!

    Alternatively, if you don't want to use spirulina at all, you can still make this recipe. You won't get the blue color, but all the flavors of this cookie dough will still be there!

    Ingredient Notes

    So besides blue spirulina, what's in this cookie dough? And how is it so healthy?

    • Chickpeas: Ever heard of dessert hummus? This is the same concept. Blend chickpeas into a paste for a perfect cookie dough texture. I recommend using dry chickpeas that you've soaked and boiled. That way you don't add any salt, resulting in the sweetest tasting chickpeas you can get. If you want to use canned chickpeas, be sure to drain and rinse them very well.
    • Quick Oats: To help thicken the chickpeas to cookie dough consistency, we'll blend some oats into oat flour and then add them to the chickpeas. Alternatively you could use oat flour, but a super fine flour might turn the dough gummy.
    • Cashew Butter: Cashew butter is the secret to the amazing texture of this cookie dough. It makes it super thick and creamy. And cashew butter is naturally sweet.
    • Maple Syrup: Of course, cookie dough needs sweetness. Maple syrup is a great neutral-tasting sweetener that won't affect the color. You could use date syrup if you want, but the color of the dough will be browner.
    • Vanilla Extract: A touch of vanilla adds great flavor to this dough.
    • Blue Spirulina: For beautiful blue color. I was gifted some blue spirulina from this brand, and I've been loving it.
    • Chocolate Chip Cookies: It wouldn't be true Cookie Monster cookie dough without actual chocolate chip cookies involved. Head over to my recipe for the softest vegan chocolate chip cookies to make yourself a few delicious cookies for this cookie dough.

    How to make Cookie Monster Chickpea Cookie Dough

    Step 1. In a food processor, blend the oats into a flour.

    Step 2. Add the chickpeas, cashew butter, maple syrup, vanilla extract, and spirulina. Blend until smooth.

    Step 3. Crumble the chocolate chip cookies into small chunks.

    Step 4. Transfer the cookie dough into a bowl and sprinkle with cookie chunks. Enjoy!
