Make creamy berry sorbet at home, without the cream! This dairy-free sorbet takes 10 minutes to make and tastes just like store-bought.

Have you ever picked up a carton of sorbet and looked at the ingredients? I did recently, and I realized that I have all the ingredients on the list. So, why not make it myself?!
Sorbet is basically fruit and sugar, so I grabbed my favorite frozen fruits and my maple simple syrup recipe, and got to work.
Turns out, not only is sorbet made with simple ingredients, it's incredibly easy to make! It takes 10 minutes of active time, and then a few hours in the fridge. And voila - a homemade, healthier sorbet that is just as creamy and delicious as the store-bought version.

Why this recipe works
Sorbet is like a mixture of ice cream and smoothie. It's a little more decadent than a smoothie, but with less (read: no) cream than ice cream.
The key to a delicious sorbet is adding sweetness in the form of a liquid to the fruit. This creates a creamier texture and adds to the richness of the sorbet, avoiding a fruit smoothie result.

Ingredient Notes & Substitutions
- Maple Simple Syrup: a traditional simple syrup is made with sugar and water, but for a slightly healthier version, make my maple simple syrup. If you prefer the sugar version, simply replace the maple syrup with an equivalent amount of organic cane sugar.
- Mixed Berries: I used a cherry-blueberry-blackberry blend. Feel free to use any berry or berry combination you enjoy!
- Lemon Juice: a bit of acid from the lemon juice helps to bring out the flavor of the berries

How to make Creamy Berry Sorbet
Step 1. Let the berries thaw at room temperature while you make the simple syrup. Make simple syrup by combining the maple syrup and water in a small saucepan. Bring to a boil, then turn off the heat and let cool slightly.

Step 2. Add the berries, simple syrup, and lemon juice to a blender. Blend on a high setting - run the blender at least twice. If desired, serve immediately as a soft-serve sorbet.

Step 3. Place the mixture in a freezer-safe ziplock bag. Place in the freezer for 4 hours, or overnight. Use your hands to massage the bag every hour (if desired, for less ice crystals to form).

Step 4. When ready to serve, let thaw 2-3 minutes, then scoop and enjoy!

FAQ & Expert Tips
Yes. You need a blender to make this recipe. I recommend a blender, but a food processor can also work.
You can replace the simple syrup with water, if desired. This will create more of a fruit smoothie taste.
This sorbet is *very* scoopable. However, it will melt if left out to thaw for more than a few minutes. I recommend allowing 2-3 minutes at room temperature before scooping. Then place any leftovers immediately back into the freezer.
Store sorbet in the freezer. I often store my homemade ice creams and sorbets in freezer safe bags, to maximize freezer space.
