Sweet potatoes are the best! They are so versatile. I have so many incredible recipes from fries to soup to brownies that use the amazing sweet potato.
This recipe makes sweet potatoes the star and enhances their sweet flavor with a date glaze. Add a pop of spice with cayenne and you've got that delicious sweet and spicy flavor profile. Finally, stir in some fresh cilantro for some color and brightness. So good!

Ingredient Notes
- Sweet Potatoes: I used regular sweet potatoes for this dish, but I think this recipe would taste amazing with Japanese sweet potatoes too!
- Vegetable Stock: I used vegetable stock in place of oil in all my cooking. It adds moisture so the potatoes won't stick to the pan.
- Date Syrup: Date syrup is just blended dates. It's a sticky paste that's made entirely from fruit! If you don't have date syrup, you can use maple syrup, but the potatoes won't end up with that thick glaze.
- Spices: Cumin, cayenne, salt, and pepper.
- Fresh Cilantro: Using fresh cilantro is key here - you want to be able to add that beautiful burst of freshness to the dish.

How to make Date-Glazed Spicy Sweet Potatoes
Step 1. Preheat the oven to 450. Line a baking sheet with aluminum foil.
Step 2. Chop the sweet potatoes into cubes, approximately ½-inch thick. Place in a large bowl.
Step 3. In a small bowl, mix the vegetable broth, date syrup, cumin, cayenne, salt, and pepper.
Step 4. Pour the mixture over the sweet potatoes and stir to coat.
Step 5. Arrange the sweet potatoes in one layer on the baking sheet. Bake for 15 minutes, stir, and then bake another 10-20 minutes, until the potatoes are starting to brown.
Step 6. Remove from the oven. Place the potatoes back in the large bowl and stir in the chopped cilantro. Taste and season with additional salt and pepper. Enjoy!
