High protein tacos made from seitan make taco night better than ever! These easy seitan tacos are ready in about 30 minutes!

Taco night is indeed a regular meal rotation in my house (not always on Tuesday, but somehow more often on Tuesday than you'd think is probable!)
I've got plenty of taco recipes, so whatever flavor/texture combo I'm feeling that week can easily become a reality. My typical go-to recipe is my tempeh tacos but lentil tacos are always a hit and tofu tacos are a great way to use up extra tofu.
These seitan tacos are highest on my list for "high protein tacos" - seitan is packed with plant protein and is my go-to protein source these days. These tacos feature my ground beef crumbles. They are so easy to make and the seitan does NOT need to be boiled (thank goodness because who has time for that?!)

Ingredient Notes & Substitutions
- Vegan Ground Beef Crumbles: my seitan ground beef recipe takes about 25 minutes from start to finish. Start by making this recipe and then come back here to finish off the tacos.
- Onion: I used a yellow onion, but a white or red onion would both be great
- Black Beans: feel free to use kidney or pinto beans instead
- Garlic
- Taco Seasoning: I use my homemade Taco Seasoning - it takes two minutes to make if you don't already have some
- To Serve: Tortillas or Taco Shells, Lettuce, Tomato, Onion

Step 1. In a non-stick pan over medium heat, cook the onion until just starting to soften.

Step 2. Add the beef, black beans, garlic, and taco seasoning to the pan. Cook for 2-4 minutes until the seitan and beans are warmed through.
