    Garlic Roasted Radishes (Whole Roasted)

    Add a pop of color to your table with these beautiful pink Garlic Roasted Radishes. Roasted Radishes are a light, fresh, spring dish. Ready in only 30 minutes!

    When I think of spring I immediately think of blooming flowers and tons of pastel colors. I love how the whole of creation comes back to life during this time.

    And I love seeing that in food. Not only is eating seasonally good for our biological clocks and for local businesses, it is great to know that you are eating a food at the peak of freshness. Eating foods that have been recently harvested is one of the best ways to maximize nutritional benefit.

    Plus, when the food is as beautiful and springy as these radishes, it's actually a joy to eat them.

    I made a recipe similar to this for my Easter dinner and my favorite part of the meal was the absolutely gorgeous color of cooked radishes. When radishes are raw they are bright red, but as they cook their color softens to a rosy shade of pink. Beautiful!

    Another beautiful thing? How easy this radish dish is. These Garlic Roasted Radishes take about 5 minutes to prep and then you just pop them in the oven and wait for the magic to happen.

    Can you cook radishes?

    Yes! Raw radishes have a peppery flavor, but when you cook radishes they soften and become sweeter and more mild.

    Roasting radishes in the oven is a great way to eat more radishes, especially if you don't like the bite of raw radishes.

    Why I love these Whole Roasted Radishes

    • Dietary needs - this recipe is oil-free, dairy-free, plant-based, gluten-free, and sugar-free
    • Perfect side - these radishes are quick and easy to make, perfect for a last-minute side dish
    • Simple & delicious - with only a few ingredients, these radishes still have tons of flavor. Nothing fancy required!
    • Beautiful color - the pretty pink color of roasted radishes is so beautiful! This dish would create a beautiful pop of color for your Easter dinner
    • Ready in 30 minutes - radishes don't take that long to cook since they are so small

    Ingredient Notes & Substitutions

    • Radishes: For the freshest taste, buy radishes that still have the stems on. Then chop them off right before cooking.
    • Garlic: fresh garlic is ideal for this recipe, but I've made it with freeze dried and even garlic powder - it sill tastes delicious!
    • Salt & Pepper: Add as much as you'd like, to taste.
    • Parsley: add some chopped parsley for some freshness at the end. You can also use dried parsley

    How to make Garlic Parsley Roasted Radishes

    Step 1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.

    Step 2. In a large bowl, toss the radishes with the garlic, salt, and pepper.

    Step 3. Arrange the radishes on the prepared baking sheet and bake for 20-25 minutes, until the radishes are fork-tender.

    Step 4. Serve with a sprinkle with fresh parsley. Enjoy!

    What to serve with these roasted radishes

    • On top of pasta. Switch up your pasta primavera with these delicious radishes.
    • Alongside your favorite protein. Some air fried tempeh or smoky tofu would make a perfect pair.
    • With other veggies. Like roasted mushrooms, cabbage steaks, or rainbow chard.
    • With a schmear of hummus and a side of falafel. Lean into  Middle Eastern flavors and make some homemade falafel and hummus.
    • Enjoy by themselves. These radishes are a lovely vegetable snack!

    • ½ Teaspoon Kosher Salt
    • ¼ Teaspoon Pepper
