This Green Goddess Chickpea Salad Sandwich is a creamy vegan lunch made with mashed chickpeas tossed in a vibrant green goddess dressing. Perfect for meal prep lunch!

When I was in grade school I ate a chicken salad sandwich almost every day for lunch. So I have an incredibly fond place in my heart for chicken salad sandwiches.
I've made sandwiches of chickpea salad, curry chickpea salad, and seitan chicken salad. And I love them all!
Today I'm blending the flavors of green goddess dressing with my fav sandwich, for a green goddess chickpea salad sandwich!

- Cucumber: I used a baby cucumber, but a regular cucumber works too
- Scallion

Dressing
- Basil & Spinach: basil gives this sauce pesto vibes. I also use a handful of spinach for more nutrients!
- Garlic
- Lemon Juice
- Avocados: for a creamy dressing without oil!
- Nutritional Yeast: nutritional yeast is a yellow yeast that has a cheesy flavor. It's the perfect substitute for cheese in many vegan recipes, like this pesto.

Step-By-Step Instructions
Step 1. Add all of the dressing ingredients to a blender and blend until smooth.

Step 2. Add the chickpeas to a medium bowl and use a fork or potato masher to mash slightly.

Step 3. Add the cucumber, cabbage, scallion, and the dressing. Mix well.

Step 4. Serve sandwich style with vegan mayo or hummus and lettuce.

- 1 Cup Fresh Spinach
- 2 Cloves Garlic
- Juice of 2 Lemons
- 2 Medium Avocados
- ¼ Cup Nutritional Yeast

- 1 15 Ounce Can Chickpeas drained and rinsed
- ¼ Head Green Cabbage chopped
