    This Green Goddess Chickpea Salad Sandwich is a creamy vegan lunch made with mashed chickpeas tossed in a vibrant green goddess dressing. Perfect for meal prep lunch!

    When I was in grade school I ate a chicken salad sandwich almost every day for lunch. So I have an incredibly fond place in my heart for chicken salad sandwiches.

    I've made sandwiches of chickpea salad, curry chickpea salad, and seitan chicken salad. And I love them all!

    Today I'm blending the flavors of green goddess dressing with my fav sandwich, for a green goddess chickpea salad sandwich!

    Ingredient Notes & Substitutions

    • Chickpeas: choose canned chickpeas without added salt, or for a bit more flavor soak and cook dry chickpeas. You can also make this salad with other vegan meats - try it with my seitan chicken.
    • Green Cabbage: a nod to the viral green goddess salad recipe
    • Cucumber: I used a baby cucumber, but a regular cucumber works too
    • Scallion

    Dressing

    • Basil & Spinach: basil gives this sauce pesto vibes. I also use a handful of spinach for more nutrients!
    • Garlic
    • Lemon Juice
    • Avocados: for a creamy dressing without oil!
    • Nutritional Yeast: nutritional yeast is a yellow yeast that has a cheesy flavor. It's the perfect substitute for cheese in many vegan recipes, like this pesto.
    • Salt
    • Water

    Step-By-Step Instructions

    Step 1. Add all of the dressing ingredients to a blender and blend until smooth.

    Step 2. Add the chickpeas to a medium bowl and use a fork or potato masher to mash slightly.

    Step 3. Add the cucumber, cabbage, scallion, and the dressing. Mix well.

    Can I use a different bean besides chickpeas?

    Yes! White beans like cannellini or navy beans work well too.

    Dressing

    • 1 Cup Fresh Basil
    • 1 Cup Fresh Spinach
    • 2 Cloves Garlic
    • Juice of 2 Lemons
    • 2 Medium Avocados
    • ¼ Cup Nutritional Yeast
    • 1 Teaspoon Salt
    • ½ Cup Water

    Salad

    • 1 15 Ounce Can Chickpeas drained and rinsed
    • ¼ Head Green Cabbage chopped
    • 1 Baby Cucumber chopped
    • 1 Scallion sliced

    Sandwich

    • Sandwich Bread
    • Green Leaf Lettuce
    • Vegan Mayo or Hummus

    Instructions

    • Add all of the dressing ingredients to a blender and blend until smooth.
    • Add the chickpeas to a medium bowl and use a fork or potato masher to mash slightly.
    • Add the cucumber, cabbage, scallion, and the dressing. Mix well.
    • Serve sandwich style with vegan mayo or hummus and lettuce.
