Turns out there are a variety of kiwi recipes on the internet. I saw lots of kiwi smoothies and ice creams. I also came across a few kiwi cocktails that I'll be putting on my list of drinks to try.
In my searching I came across a some salads that had kiwis, so I was inspired to make my own. I love the idea of mixing fruits and vegetables in salads, so that's what I did.
I also added some nuts for proper nutrient absorption. Fats help your body process all the vitamins in the greens!
This Kiwi Apple Spinach Salad is absolutely beautiful in my opinion. There are so many different colors that make the dish feel so vibrant and springy. Plus, the sweetness from the kiwis and apples make for a completely different vibe than a traditional salad.

Ingredient Notes & Substitutions
- Fresh Spinach: The base of this salad. Spinach has so many good-for-you vitamins and minerals. You could also use kale or mixed greens.
- Fuji Apples: You can use any kind of sweet apple you have
- Kiwis: The actual star of this dish. Kiwis have a sweet, yet citrusy taste that ties everything in the salad together.
- Corn Kernels: I love the pop of yellow that the corn gives. It is slightly sweet but also brings a savory flair to the salad. Use frozen corn to avoid added sugars.
- Sliced Red Onion: Onion adds another color to the salad and the slight bite adds an edge. You can use yellow or white onion as a sub.
- Sliced Almonds: Like I mentioned earlier, fat enables nutrient absorption. Plus the almonds add another fun layer to the salad. You can also use whole almonds or any other nut you like.
- Balsamic Vinegar: the base of many dressings. The key to a good dressing is a quality balsamic.
- Maple Syrup: Adding a bit of sweetness to the balsamic creates a delicious, tangy-sweet dressing. You can also use date syrup or no syrup at all.

How to make Kiwi Apple Spinach Salad
Step 1. In a small bowl mix the balsamic vinegar and maple syrup. Taste and add more syrup as necessary to balance the tang of the balsamic.
Step 2. Divide all the ingredients evenly into four bowls. Dress each salad as desired. Enjoy!

- 2 Large Fuji Apples thinly sliced
- 2-3 Kiwis peeled and sliced into discs
- ½ Cup Corn Kernels
