    Kiwi Kale Smoothie

    This Vegan Kiwi Kale Smoothie is a green drink filled with nutrient-dense fruits and veggies. Enjoy this smoothie for breakfast or as a snack.

    Every time I make a smoothie I think to myself, I should make these more often. But somehow I never get myself into the habit.

    Consider this my resolution, because smoothies are incredible and they are SO good for you. It's worth it to put in the extra effort to make sure you're drinking them regularly.

    Smoothies are a great way to get in tons of nutrients without having to eat a whole bowl of fruit and veggies. Plus, they're perfect if you don't love the taste of a certain vegetable. Just hide it in with some fruit and you'd never know it's there.

    Why I love this Kiwi Kale Smoothie

    • Dietary needs - this smoothie is dairy-free, plant-based, oil-free, gluten-free, and sugar-free. It's also very high in fiber.
    • Quick and easy - keep frozen fruits and veggies around to throw together a smoothie whenever.
    • Nutrient dense - with greens, veggies, fruits, and healthy fats, one glass of this smoothie will send you tons of vitamins and minerals.

    I went for a green theme with this smoothie, so almost all the ingredients are green!

    • Frozen Cauliflower: Frozen cauliflower is a great way to get in some extra veggies, and you can't even taste it!
    • Frozen Bananas: Bananas add sweetness and they also work well to thicken a smoothie without adding ice. Pro tip: always keep frozen bananas in the house! They are so useful.
    • Kale: Kale is such a nutrient dense vegetable, it's the perfect addition to a healthy smoothie. While you can taste the kale slightly, adding lots of fruit helps keep the smoothie sweet and tasty.
    • Green Apple: Apples are filled with fiber! A green apple also adds sweetness.
    • Cucumber: Cucumber is just like cauliflower in that it adds nutrients but you can't taste it at all! Feel free to leave it out if you don't want to use it.
    • Kiwis: Kiwis are SO good for you and they are super sweet. If you want, you can freeze the kiwis ahead of time to have another frozen element.
    • Walnuts: A bit of fat helps you digest all the fruits and veg. Just a few walnuts can work wonders. Plus, walnuts are a superfood themselves!
    • Ginger: For a bit of tang and freshness. If you don't have fresh ginger, use ground ginger instead.
    • Liquid of choice: You can use any liquid that you want, like non-dairy milk, pineapple juice, or water.

    How to make a Kiwi Kale Smoothie

    Step 1. Let the bananas and cauliflower thaw for a few minutes. This will help them blend easier.

    Step 2. Place all the ingredients in a blender or food processor. Blend until smooth. Enjoy!

    Storage

    This is a smoothie of course, so be sure to store any leftovers in the freezer.
