This Lemon Ginger Syrup is a bright, zesty simple syrup that add a zingy flavor to mocktails and teas. Only four ingredients!

I'm sort of obsessed with this syrup. After making gingerbread syrup and absolutely falling in love with the flavor, I knew that I wanted to try out another ginger-forward simple syrup. The fresh bite from the ginger is delicious!
And this Lemon Ginger simple syrup is significantly more versatile than my gingerbread syrup - it's great year round! It has a fresh, bright flavor that's delightful in warm weather beverages. But also lemon and ginger are both very healing ingredients, and are great for cold and flu remedies for the winter.
The syrup is great in mocktails, lemonade, teas - whatever you can dream up!

Ingredient Notes & Substitutions
- Sugar: I used organic cane sugar (regular white sugar is not vegan). You can also make this syrup with agave or maple syrup as a less refined option, especially if making this for a sick-remedy tea
- Water
- Lemon Juice: fresh lemon juice is necessary in this syrup, you will taste the difference. And if you're looking for the health benefits, fresh is the way to go
- Ginger: I also recommend fresh ginger (it is available widely and very cheap). If you want to use dried ginger, you'll need to strain the syrup through a fine mesh strainer to avoid particles.

Pro Tip: peel fresh ginger with a spoon! The outer layer comes right off.
Step-By-Step Instructions
Step 1. In a small saucepan, combine the sugar, water, ginger, and lemon juice. Bring to a boil and let boil for 1 minute.

Step 2. Remove from the heat. Let cool completely in the pan (this is necessary to infuse all the flavor!). If desired, strain into a glass. Store in the fridge.

FAQ & Expert Tips
This syrup will last 1-2 months when stored properly in an airtight jar in the fridge.
Store in an airtight jar in the fridge. I typically use a mason jar or my bitters jars pictured in this post.
If you want a less spicy syrup, you can reduce the amount of ginger you use.
If you've already made the syrup and want it to be less spicy, return the pan to the stove and add more water and sugar in a 1:1 ratio (you can start with ½ cup each). Heat until the sugar is dissolved.
