    Mint Chocolate Chip Soft Serve Ice Cream

    Mint Chocolate Chip Soft Serve is the perfect St. Patrick's Day treat! This mint-green ice cream is completely vegan and sugar-free.

    Normally I'm not a huge mint chocolate chip fan, but honestly I'm loving this Mint Chocolate Chip Soft Serve. It's SO easy to make. Just throw a couple ingredients in the blender and you've got yourself a beautiful bowl of soft serve.

    Mint Chocolate Chip Soft Serve

    This ice cream is also healthy. I'm calling it soft serve because it is so smooth and creamy and, well, soft. This amazing texture comes from frozen bananas. There's no dairy involved, yet this soft serve still has an amazingly soft texture. I just wanna run my spoon through it.

    Also, this soft serve has a natural green color. No food coloring! I love this. It's amazing how many beautiful colors we can create from real food. We don't have to use chemicals or dyes.

    How to make Vegan Mint Chip Soft Serve Green

    You have two options:

    One. Spirulina

    Two. Spinach

    Both are great because they add color and nutrients, but not flavor. I promise!

    What is spirulina?

    Spirulina is a blue-green algae. It is a bacteria that is high in protein, filled with B vitamins, and high in other nutrients like copper and iron. It's considered a health food because of its high nutrient content.

    You can get spirulina in pills or tablets, but for this recipe we'll use spirulina powder. Spirulina comes in two different colors - for this mint-colored recipe we'll use the traditional green spirulina. If you go to the store, you will most likely find green spirulina, so you don't need to worry about hunting down a specific color.

    If you're a little concerned about putting algae in ice cream, don't worry. You can't taste it at all! It just turns the soft serve a beautiful mint color.

    Alternatively, if you don't want to use spirulina or spinach, you can still make this recipe. You will just have soft-serve that isn't mint green. No big deal! It will still taste nice and minty.

    Mint Chocolate Chip Soft Serve

    Ingredient Notes

    • Bananas: Frozen bananas make the best soft serve! The day before you want to make this recipe simply chop up a few bananas an throw them in the freezer.
    • Green Spirulina Powder or Spinach: You should be able to find Spirulina in your local natural foods store. Or you can buy some online! You can also use raw spinach.
    • Mint Extract or Fresh Mint: In order to get that classic mint flavor, you can use mint or peppermint extract. Be careful with this stuff - a little goes a long way. You can also use fresh mint, which adds some color and freshness.
    • Non-Dairy Milk: Vegan soft serve works best when it's mostly just thick and creamy bananas, but a few tablespoons of non-dairy milk will help the bananas blend together. I used almond milk, but you can use whatever non-dairy milk you have on hand.
    • Vegan Chocolate Chips: It wouldn't be mint chocolate chip without the choco chips! I love using these vegan chocolate chips.

    How to make Mint Chocolate Chip Soft Serve

    Step 1. Take the bananas out of the freezer and allow to thaw for 5-10 minutes, so they become easy to blend.

    Step 2. Add the bananas, spinach/spirulina, and mint/mint extract to a blender or food processor and blend until smooth, adding the non-dairy milk, if necessary to help blend.

    Step 3. Add the chocolate chips and pulse to incorporate then transfer to a bowl OR spoon the mixture into a bowl and sprinkle the chocolate chips on top. Enjoy!
