Potato wedges are so simple but they're still full of flavor. And they're easy to make in the air fryer.

Why I love these Air Fryer Potato Wedges
- Dietary needs - these potato wedges are vegan, gluten-free, dairy-free, oil-free, and sugar free
- Really simple - with just a few ingredients - potatoes, vegetable stock, and spices, these potato wedges could not be more easy!
- Better than average potato wedges - wanna know the secret? It's smoked paprika. Smoked paprika is smoky and sweet. I use it in many of my potato recipes for the best flavor!

Ingredient Notes & Substitutions
- Russet Potatoes: also known as Idaho potatoes, Russets are typically used for potato wedges. These wedges would also taste great with sweet potatoes
- Vegetable Stock: instead of oil, we'll use vegetable stock to adhere the spices to the potatoes. Works like a charm!
- Spices: smoked paprika, dried rosemary, garlic powder, onion powder, salt, and pepper
- To serve: chopped fresh parsley, flaky sea salt, ketchup, vegan mayo, etc.

How to make Oil-Free Air Fryer Potato Wedges
Step 1. Preheat the air fryer to 400°F.
Step 2. Slice the potatoes in half lengthwise then cut into ½" wedges.

Step 3. Transfer to a large bowl and toss with vegetable stock and spices.

Step 4. Arrange in an even layer your air fryer (this may require multiple batches) and roast for 25-30 minutes or until cooked through and crisp.
