Mushrooms can be a controversial subject. When you talk to people about mushrooms, no one is just "neutral". Either you love them or you hate them.

Until this year, I was in the "hate them" camp. There was always something about mushrooms that turned me off. I didn't mind the flavor, but the texture was so unpleasant to me. I hated them raw and I hated them cooked. No matter what you did, I could tell if there were mushrooms in a dish.
But something changed. I can't pinpoint when, but in an attempt to be open-minded I tried mushrooms again and I liked them.
There's something to be said for trying something over and over. After a while you'll probably end up liking it.

If this is how you feel about mushrooms, first of all, thank you for reading this far. Back when I hated mushrooms, I wouldn't have even clicked on a recipe with mushrooms, let alone read the blog post.
I do encourage you to give mushrooms a try if you're not already a fan. They have an incredible nutritional profile. One of their main benefits is vitamin D.
Mushrooms are exposed to sunlight and are a non-animal source of vitamin D2. Your body turns vitamin D2 into the active form of vitamin D which it needs to absorb calcium and keep your bones healthy. Plus, mushrooms are so easy to make. I love to buy them pre-sliced so I can just throw them on the baking sheet and have delicious roasted mushrooms in minutes.

Ingredient Notes & Substitutions
- Mushrooms: You can use any type of mushrooms you like. I've done this with white button mushrooms and creminis and they are both delicious. Buy sliced to speed up the process!
- Garlic Powder: For some umami flavor. You could use fresh garlic if you want.
- Chili Powder: I love adding chili powder for a kick of spice. You could also use cayenne pepper.
- Salt & Pepper: To taste, as needed.

How to Make Oil-Free Roasted Mushrooms
Step 1. Preheat the oven to 450°. Line a baking sheet with aluminum foil.
Step 2. Spread the mushrooms on the baking sheet. Sprinkle the spices evenly over the mushrooms.
Step 3. Bake for 15 minutes. The liquid in the mushrooms will release and the mushrooms should be soft and tender. Enjoy!
