Raise your hand if you hated brussels sprouts as a kid...
And now raise your hand if you still hate brussels sprouts...
I think many people have an aversion to brussels sprouts because they were forced to eat an overcooked mush that their parents called brussels sprouts. I don't blame you - I don't want to eat green mush either.
But with proper cooking technique, and the help of some flavorful seasonings, brussels sprouts can not only be delicious, but crave-worthy!
That's these Oil-Free Skillet-Fried Brussels Sprouts. We will pan-fry these sprouts so they are browned on the outside, but still crisp, crunchy, and fresh. Add a sweet & spicy sauce, top with some sesame seeds, and you've got yourself a tasty dish that even the brussels sprouts haters will love!

Ingredient Notes
- Brussels Sprouts: The star of the dish. If you're feeling fancy, grab a bag of green brussels sprouts and a bag of purple - then you'll have a beautiful mix of multi-colored sprouts.
- Maple or Date Syrup: You can use either maple or date syrup for this recipe - if you use date syrup, this recipe will be completely sugar-free.
- Kosher Salt: To enhance the other flavors in this recipe! I like using kosher but you can use regular salt too.
- Rice Vinegar: Rice vinegar adds a tang that complements the sweetness of the maple or date syrup. You can sub apple cider vinegar or another light white vinegar.
- Sriracha: Depending on your spice preferences, you might want a bit more spice - feel free to add more sriracha, to taste.
- Sesame Seeds: These little seeds add a bit of crunch and nuttiness. They're optional but add lovely texture to the dish.
- Scallions: If you want, you can chop up a few green onions (aka scallions) to sprinkle on top of the sprouts at the end.

How to make Oil-Free Skillet-Fried Brussels Sprouts
Step 1. In a medium bowl, mix the trimmed Brussels sprouts with the 1 tablespoon of the maple syrup or date syrup, salt, and 1 tablespoon water.
Step 2. Place the brussels sprouts cut-side down on the pan. Cook until deeply browned, adding a splash of water as necessary to avoid sticking. If the sprouts are extra large, flip them over and cook on the other side until tender.

Step 3. Remove the sprouts from the heat and place them back in the bowl. Add the rice vinegar, sriracha, and remaining maple syrup. Stir to combine.
Step 4. To serve, sprinkle with the sesame seeds and chopped scallions. Season with salt and pepper, to taste. Enjoy!
