    Peanut Butter Banana Oatmeal Cookies

    Peanut Butter Banana Oatmeal Cookies are soft and chewy with a slight crunch. Filled with peanuty goodness, these cookies are a fun and fiber-filled plant-based treat.

    One of my favorite things to do is bake cookies for my friends. I often show up to hang out with my friends with a bag of whatever batch of cookies I felt like making that day. Sometimes I like to surprise my friends with cookies I know they'll love.

    This particular batch of cookies came into existence in my attempt to please a friend who loves banana and one who loves peanut butter. Luckily, peanut butter and banana go very well together, so my job was not hard.

    When I brought the cookies to my friends, both of them were very excited about the flavors. And both were satisfied with the taste. Mission accomplished!

    Peanut Butter Banana Oatmeal Cookies

    The second reason these cookies came into existence is a third friend who randomly gave me steel cut oats. She told me that she wouldn't use them and asked if I would.

    Normally, I don't cook with steel cut oats because they take super long to cook, but I took the oats anyway because, well, they're oats. And I love oats. (See this, this, this, and this.)

    And what else would I do with oats besides make cookies?!

    What's great about these cookies is that they are made of very basic ingredients, like steel cut oats. You probably have most, if not all, of the ingredients already sitting in your house. These cookies definitely wouldn't have come into existence if I myself didn't have the ingredients laying around on a random Sunday.

    Ingredients

    • Ground Flax
    • Peanut Butter (I used crunchy peanut butter)
    • Date Sugar
    • Oat Flour
    • Baking Soda
    • Nutmeg
    • Vanilla
    • Steel Cut Oats
    • Mashed Banana
    • Chopped Peanuts

    How to Make Peanut Butter Banana Oatmeal Cookies

    Step 1. Start by making a small flax egg: mix the ground flaxseed and water and let sit in the fridge for 5 minutes.

    Step 2. Then add all the ingredients except the peanuts to a food processor. Process until combined. Pulse in the peanuts.

    Step 3. Scoop balls of dough onto the parchment-lined pan and flatten the cookies. Then bake!

    Step 4. When the cookies are done, let them cool slightly on pan, then move to a cooling rack to let them cool completely. Enjoy!

    Ingredients

    • 1 Teaspoon Ground Flax
    • 2 Teaspoons Water
    • ¼ Cup Peanut Butter I used crunchy peanut butter
    • ⅓ Cup Date Sugar
    • ½ Cup Oat Flour
    • ⅛ Teaspoon Baking Soda
    • ¼ Teaspoon Nutmeg
    • ½ Teaspoon Vanilla
    • ½ Cup + 1 Tablespoon Steel Cut Oats
    • ⅓ Cup Mashed Banana
    • ¼ Cup Chopped Peanuts

    Instructions

    • Preheat the oven to 375. Line a baking sheet with parchment paper. Make a small flax egg: mix the ground flaxseed and water and let sit in the fridge for 5 minutes.
    • Add all the ingredients except the peanuts to a food processor. Process until combined. Pulse in the peanuts.
    • Scoop 2-tablespoon-sized balls of dough onto the parchment-lined pan. Flatten.
    • Bake 10-12 minutes. Let cool slightly on pan, then move to a cooling rack to let the cookies cool completely. Enjoy!
