Plant-Based Peppermint Chocolate Truffles are bite-sized vegan truffles with a burst of chocolate and peppermint flavors. These gluten-free treats are made with whole food plant-based ingredients.

I'm extra excited for today's recipe!
Why?? Because of the beautiful holiday linen in the pictures. A few months ago, after I moved back to Ohio, I joined a faith group. In this group I've met many amazing people. One of whom is named Margherita.
Margherita owns a small business called Barefoot Homemade where she sells the most beautiful linens: placemats, tablecloths, bread baskets - all homemade. She lent me these Christmas themed placemats to use with this recipe.

I'm such a fan of the Alice in Wonderland print. Alice is one of my favorite characters and I've read Lewis Carroll's book several times. And the colors in the placemat are just perfect for Christmas.
If you don't love Alice as much as I do, these placemats are reversible. You have the option of a gold floral print or a gold chevron print. Both are very classy and so festive!

I think these linens are so beautiful. They would make a great Christmas gift, or some of her other linens would make a great anytime gift! And, I just have to say, Margherita is NOT paying me to say any of this. I think her linens are gorgeous and I'm so thrilled I got to photograph them.
Plus, they look great with these peppermint truffles!!

Why I love these Plant-Based Peppermint Chocolate Truffles

Ingredient Notes
- Cocoa Powder: use an unsweetened cocoa powder to avoid added sugars.
- Almond Flour
- Almond Butter: or other neutral nut butter.
- Date Sugar: date sugar is made from dried dates that have been ground into a powder. You can find it at health food stores or online.
- Maple Syrup: for a completely fruit-sweetened version you can use date syrup.
- Peppermint Extract
- Salt
- Vegan Dark Chocolate: you can choose a chocolate that works for your desired sweetness. Most vegan chocolates have some added sugar, so if you are looking for a no-added-sugar version be sure to use 100% unsweetened dark chocolate - you could then add some maple syrup to the chocolate to sweeten it.
- Toppings: crushed candy canes, sea salt, drizzle of chocolate

How to make Plant-Based Peppermint Chocolate Truffles
Step 1. In a medium bowl, mix the almond butter, cocoa powder, almond flour, maple syrup, date sugar, and peppermint extract.
Step 2. Use a tablespoon to scoop the mixture and roll into balls.
Step 3. Refrigerate the truffles while you melt the chocolate. Heat the chocolate in the microwave on ½ power. Stir every 30 seconds until the chocolate is melted.
Step 4. Use a toothpick or spoon to cover each ball in chocolate. Place on a parchment-lined pan and refrigerate or freeze for 20-30 minutes to allow the chocolate to harden. Serve and enjoy!
