This whole food plant-based Waldorf Salad is the vegan version of the classic recipe. Using a homemade mayo without oil, this salad is the healthy and delicious twist.

I took the classic Waldorf salad recipe and turned it plant-based. Usually a Waldorf salad has tons of mayo. This plant-based Waldorf salad does too, but the mayo is made from whole food ingredients.

What is Waldorf salad?
Waldorf salad isn't exactly the traditional greens and veggies salad. It's more like a 'Midwest' salad. Ya know, one where everything is covered in mayo.
Waldorf salad is usually made with apples, celery, walnuts, and grapes, dressed in mayonnaise.
This vegan Waldorf salad is a plant-based version of the traditional salad. We take the fruits and nuts, and cover them in a whole food plant-based mayo (one that's actually good for you!).

- Quick and easy - this salad is ready in just 15 minutes! It's only a few ingredients and just requires some chopping

Ingredient Notes
- Vegan Mayo: use my 5-minute homemade mayo for a completely whole food plant-based option. Or, opt for an avocado oil based store bought mayo.
- Lemon Juice: fresh lemon juice is best! You can also use lime juice.
- Parsley: if you have fresh parsley, that is ideal. Otherwise use a freeze dried or lightly dried parsley.
- Maple Syrup: for a completely fruit-sweetened dressing you can use date syrup.
- Salt
- Red Grapes: I like red grapes for the color, but green grapes work here too.
- Green Apples: green apples add a little tang to the salad. If you're looking for a sweeter salad, feel free to use a sweet red apple variety instead.
- Celery
- Walnuts & Pepitas: Traditionally, Waldorf salad uses just walnuts, but I added pepitas for some extra color and nutrients. Feel free to use one or both.
- Boston Lettuce: this salad can be served without lettuce, but it's traditionally served on a bed of lettuce

How to make plant-based Waldorf Salad
Step 1. Combine all the ingredients, except the lettuce, in a large bowl. Stir to combine.

Step 2. Serve on a bed of lettuce. Enjoy!

Plant-Based Waldorf Salad
Ingredients
- ⅔ Cup Plant-Based Mayonnaise
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Chopped Fresh or Dried Parsley
- 1 Tablespoon Maple Syrup
- 1 Teaspoon Salt
- 1 Cup Halved Red Grapes
- 2 Small Green Apples chopped
- 3 Stalks Celery chopped
- ⅓ Cup Walnuts
- ¼ Cup Pepitas optional
- 1 Head Boston Lettuce to serve
Instructions
- Combine all the ingredients, except the lettuce, in a large bowl. Stir to combine.
- Serve on a bed of lettuce. Enjoy!
