    Pumpkin is one of those foods that doesn't get a lot of attention. Unless its fall. Then, everyone wants to eat all the pumpkin.

    Pumpkin Spice Oatmeal Cookies

    And for good reason. Pumpkin is actually really good for you! It's filled with vitamin A and fiber. Fiber is such a key nutrient that very few people get enough of. But it doesn't have to be tricky -- fiber is in our most favorite fall food. Plus, when you make these Pumpkin Spice Oatmeal Cookies, you get EVEN MORE FIBER from the oats and dates.

    Fiber isn't the only nutrient packed in these cookies. The secret ingredient to most vegan baking is flaxseed. Flaxseed (which also contains fiber) is full of the Omeaga-3 essential fatty acid. Omega-3s helps support normal cardiovascular function and helps maintain healthy, hair, skin, and nails -- no supplements needed!

    Flaxseed also boasts both Omega-6 and Omega-9 fatty acids which are also essential to a healthy diet. Besides all those benefits, flaxseeds have been shown to reduce blood pressure and risk of cancer.     Bottom line: you definitely want flaxseed in these cookies--flaxseeds are one of the healthiest foods!

    Pumpkin Spice Oatmeal Cookies are sweetened with date syrup, my go-to sweetener. There's nothing better than sweetness coming from 100% fruit. MORE FIBER. And sweet, healthy, deliciousness.

    After pumpkin (of course), oats, flaxseed, and dates, these cookies just need some spice. I added both cinnamon and pumpkin pie spice for all the fall flavors. I also threw in a splash of vanilla extract.

    How to make Pumpkin Spice Oatmeal Cookies

    Step 1. To make the cookies, start by making a flax egg (ground flaxseed mixed in water and set in the fridge for 5 minutes).

    Step 2. While the flax egg is gelling, combine all the other ingredients. Add in the flax egg.

    Step 3. Scoop into tablespoon-sized balls and bake!

    It doesn't get much simpler than that. Super healthy. Super FALL. Ready in 15 minutes. Enjoy!

    Ingredients

    • 1 Cup Rolled Oats gluten free, if necessary
    • ⅔ Cup Canned Pumpkin
    • 2 Tablespoons Date Syrup
    • 1 Tablespoon Ground Flaxseed
    • 1 Teaspoon Cinnamon
    • 1 Teaspoon Pumpkin Pie Spice
    • 1 Teaspoon Vanilla Extract

    Instructions

    • Preheat the oven to 350. Line a baking sheet with parchment paper. Make a flax egg: combine the flaxseed with 2 tablespoons of water and let sit in the fridge for 5 minutes.
    • In a medium bowl, combine all the ingredients. (Don't forget the flax egg from the fridge.)
    • Scoop tablespoon-sized balls of dough onto the baking sheet. Bake for 11 minutes. Enjoy!

    Notes

    These cookies will not spread much in the oven. If you want flat cookies, use the palm of your hand to flatten each cookie before baking.
