Ingredient Notes & Substitutions
- Rolled Oats: You can make granola with quick oats but it's much better with rolled oats. If you are gluten-sensitive be sure to buy certified gluten-free oats to avoid any cross contamination
- Maple Syrup: I like using maple syrup in my granola recipes because it creates the best crunch. Date syrup is a great sub if you'd like to make the recipe completely fruit-sweetened.
- Pepitas: I like adding pepitas for their sweet, nutty flavor and the texture they add to the granola. Sunflower seeds are another great seed option. Or, for a version with nuts add some almonds, walnuts, or pecans
- Chia Seeds: chia seeds help soak in some of the moisture of the maple syrup and create some good clusters. If you don't want to add chia seeds I suggest adding some ground flaxseed instead
- Salt
- Cinnamon
- Dried Fruit: I used dried cranberries and I think they pair perfectly with the pepitas. Raisins, currants, or dried blueberries would also be great additions.

FAQs & Expert Tips
The key to a crunchy granola is to let it cool completely on the pan. This allows the syrup to dry completely and bind each cluster together.
Patience is essential when you want all those clusters!

Yes. Oats are naturally gluten-free. Some oats are contaminated with gluten during the processing so if you're allergic to gluten be sure to buy certified gluten-free oats.
Use date syrup instead of maple syrup and choose a dried fruit that doesn't have any added sugar.

Our house is peanut/tree nut free due to our son’s allergies. This granola was so tasty! It’s nice to have a recipe where no substitutions are necessary.
