What is Green Goddess flavor?
Green Goddess is typically found in salad dressing form. I've just transformed those flavors into these burgers!
Green Goddess dressing usually has mayo, sour cream, chives, anchovy, tarragon, lemon juice, and pepper. While we won't be using the mayo, sour cream, or anchovies for this plant-based recipe, the burgers and dressing still have amazing flavor.

Ingredient Notes & Substitutions
- Dry Chickpeas: Using dry chickpeas is the secret to getting delicious, moist burgers. You must use dry chickpeas in order for this recipe to turn out correctly!
- Baking Soda
- Onion & Garlic: you could replace these with onion and garlic powders, though you might need to add some liquid to the mixture, since the whole food versions have water in them
- Herbs: Parsley, scallions, tarragon, & chives. Classic herbs found in green goddess dressing. Ideally, use fresh herbs. If you don't have access to fresh versions of all of these, you can sub the dry spices.
- Rice Vinegar: Another classic green goddess flavor. You can sub any light vinegar like apple cider vinegar.
- Spices: Salt, pepper, cayenne. If you want extra spice you can increase the cayenne.
- Oat Flour: flour helps keep the burgers together and soaks up some of the moisture from the fresh chickpeas. You could use all purpose flour or a gluten-free all purpose flour instead
- Cornstarch: you can sub arrowroot
- Baking Powder
- Toppings: spinach, tomatoes, pickles, pickled red onions, avocado, etc.

Green Goddess Dressing
- Unsweetened Coconut Yogurt: You can also use any non-dairy yogurt you prefer.
- Herbs: parsley, tarragon, chives. Fresh is ideal, but you could use the dried versions of these herbs as a sub.
- Lemon Juice & Rice Vinegar: You can use all lemon juice or all rice vinegar if you don't have one or the other.
- Spices: garlic powder, cayenne, salt & pepper.

How to make Air-Fryer Green Goddess Burgers
Step 1. The day before you want to make falafel, soak the chickpeas and baking soda in lukewarm water. The beans will expand as they soak, so make sure to cover them in several inches of water.
Step 2. Add the chickpeas, onion, garlic, parsley, scallions, tarragon, chives, rice vinegar, salt, pepper, and cayenne to a food processor. Blend until mostly smooth. Don't over mix.

Step 3. Transfer the mixture to a bowl and refrigerate for an hour or so.
Step 4. Stir in the oat flour and baking powder.

Step 5. Shape the mixture into ½ cup patties. Flatten and place on the mesh tray of the air fryer.
Step 6. Fry on the third rack of the air fryer at 375 for 13-15 minutes.

Step 7. Meanwhile make the green goddess dressing. Mix all the dressing ingredients in a small bowl.
Step 8. When the patties are cooked, assemble the burgers. Add your favorite toppings and drizzle with green goddess dressing. Enjoy!

FAQ & Expert Tips
Yes! If you don't have an air fryer, you can definitely still make these burgers in your oven. You'll want to increase the baking time by about 10 minutes. Check for doneness by making sure the outside of the burgers is nice and brown and they stick together nicely.
Yes. I have tried this recipe with canned chickpeas and it does not work. The canned chickpeas are so mushy that the burgers just fall apart, even if you add extra flour.
The good news is, dry chickpeas are significantly cheaper than canned chickpeas. AND all you have to do is soak them the night before.
You don't have to cook the chickpeas before you make this recipe.

- 1 Small Red Onion quartered
- 8 Cloves Garlic
- 1 Cup Fresh Parsley
- ½ Cup Chopped Scallions
- ¼ Cup Loosely Packed Tarragon

- 1 Tablespoon Rice Vinegar
- 2 Tablespoons Kosher Salt
- 1 Teaspoon Ground Black Pepper
- ½ Teaspoon Cayenne
- 1 Cup Oat Flour
- 2 Teaspoons Cornstarch
- ½ Teaspoon Baking Powder

- ¾ Cup Non-Dairy Yogurt
- 1 Tablespoon Chopped Parsley
- 1 Tablespoon Chopped Tarragon
- 1 Tablespoon Chopped Chives
- 1 Teaspoon Lemon Juice
- 1 Teaspoon Rice Vinegar
- 1 Teaspoon Garlic Powder
- Dash Cayenne
- Salt & Pepper to taste
Instructions
