Nachos made from sweet potatoes?! I don't know about you but this is like my dream come true.
I used to LOVE nachos, but now I try to avoid eating tortilla chips on the regular. They've got tons of oil, are highly processed, and just generally don't make me feel good after eating them. (Unless, of course, they're my homemade oil-free tortilla chips.)
But sweet potatoes? Yes please. I never feel bad after eating a sweet potato.

The secret to making the perfect tray of sweet potato nachos is to slice the potatoes nice and thin, then crisp them up in the air fryer or oven. When you create crispy sweet potatoes you have the perfect vessels for all your tasty toppings: queso, beans, vegan taco meat, corn, onions, peppers, jalapeños - whatever you want!

- Sweet Potatoes: Grab a few small/medium sweet potatoes. Potatoes with a smaller diameter make for the sturdiest chips, but as long as you try to keep the slices the same size, any size will do.
- Vegan Queso: In case you weren't getting enough veggies from the sweet potato part of these nachos, my easy vegan queso is also filled with veggies.
- Toppings: black beans, vegan taco meat, tomatoes/salsa, jalapeño, corn, pickled red onions, guacamole, olives, cilantro. Choose your favorites

How to make Air Fryer Sweet Potato Nachos
Step 1. Preheat the air fryer to 350°F. For the oven version, preheat the oven to 450°F.
Step 2. Thinly slice the sweet potatoes (optionally, use a mandolin set at 3mm). Arrange in an even layer in the basket of your air fryer and cook for 10-15 minutes, until the potatoes become crispy but not burnt. For the oven version, line a baking sheet with parchment paper, arrange the sweet potatoes in an even layer and bake for 15 minutes.

Step 3. Meanwhile, make the vegan queso.

Step 4. Transfer the potatoes to a tray or other serving plate. Top with the queso and your preferred toppings. Enjoy!

Frequently Asked Questions
Nope! I make crispy sweet potatoes in my oven all the time. An air fryer simply speeds up the cooking process and allows you to cook at a lower heat with the same results.
If you have a convection oven, you can simulate the air circulation of an air fryer really easily. Even if you don't have a convection oven, you can still achieve the same results with a few tweaks. I provide instructions for both air fryer and oven cooking below.
For this recipe I recommend using a larger air fryer. I own the NuWave Brio 14qt Air Fryer. It is large and allows you to cook multiple trays at the same time.
If you have a smaller air fryer, you may need to cook the sweet potatoes in batches to ensure they get crisp.
Choose your favorite nacho toppings! For this recipe I went with my vegan queso, olives, black beans, jalapenos, pickled red onions, tomatoes, corn, and my mushroom walnut taco meat.
You could also use salsa, guacamole or avocados, regular onion, cilantro, vegan sour cream - literally anything you love on regular nachos!

I recommend my vegan queso recipe because it is whole food plant-based. It's made from vegetables and other whole foods.
If you'd like to use a store bought vegan cheese or if you aren't vegan and want to use regular cheese, these alternatives aren't as healthy, but are definitely options!
I used my mushroom walnut taco meat for this recipe. It's a savory, umami mixture made from mushrooms, walnuts, and cauliflower! It has a lovely texture and is a great plant-based alternative to ground beef.
