    Sesame Mustard Glazed Vegetables

    Sesame Mustard Glazed Vegetables are a delicious way to add color to your dinner plate. Completely oil-free, gluten-free, and plant-based!

    I LOVE eating vegetables. Plants have so many beautiful colors and it's really fun to see how many I can put on my plate.

    We all know that it's good to eat the rainbow.

    It's also good to make sure we're switching up the foods that we eat. Even if you eat a variety of foods throughout the week, if you're eating the same variety week after week, you're doing a disservice to your body.

    As someone with gut issues, I want to do everything I can to help my body feel its best. For me, this means trying to switch up the foods I eat.

    Sesame Mustard Glazed Vegetables

    A good rule of thumb is to add one new/different food each week. Just grab something from the store that you didn't eat last week.

    For me, I eat carrots and radishes on the regular. But I don't eat turnips that often. So turnips were the perfect food to add to this recipe to help give me some variety.

    If there's a veggie that you don't typically eat, grab some from the store and add it to this dish. The more color variety the better!

    Why I love these Sesame Mustard Glazed Vegetables

    • Dietary needs - this recipe is plant-based, oil-free, gluten-free, and refined sugar-free
    • Versatile side - you can serve these Sesame Mustard Glazed Vegetables alongside any main dish for extra vegetables
    • Color and variety -- with three different colors, this dish will add some variety to your diet. Bonus points if you use a vegetable that you don't normally eat!!

    Ingredient Notes & Substitutions

    Vegetables: I used carrots, turnips, and radishes. I liked this combo because of the variety of colors, shapes, and textures. You can experiment with your favorite veggies.

    Glaze: To make the super-simple glaze, you'll need Dijon mustard, tahini, and molasses.

    These three ingredients make a super creamy glaze that has tons of flavor and a bit of a tang. It's perfect to enhance the flavor of the vegetables without overwhelming them.

    If you want, you can sub another nut butter for tahini. You could also sub date syrup or maple syrup for the molasses.

    Sesame Seeds: I sprinkled sesame seeds on top of the veggies at the end. I love how they add just a bit of texture.

    How to make Sesame Mustard Glazed Vegetables

    Step 1. Preheat the oven to 450° F. Line a baking sheet with aluminum foil.

    Step 2. Mix the mustard, tahini, and molasses together in a small bowl.

    Step 3. Arrange the vegetables in a single layer on the baking sheet.

    Step 4. Pour on the sauce and toss to coat.

    Step 5. Bake for 15 minutes, stir, and then bake another 10-15 minutes until the vegetables are soft.

    Step 6. Sprinkle with sesame seeds, serve, and enjoy!

    • 3-4 Medium Carrots sliced into matchsticks
    • 3 Turnips sliced into semi-circles
    • 1 Bunch Radishes halved
    • 2 Tablespoons Dijon Mustard
    • 1 Tablespoon Tahini
    • 1 Tablespoon Molasses
    • Sesame Seeds to serve

    Instructions
