Vegan Air Fryer Zucchini Fries are your classic breaded fries made vegan and gluten-free. These tasty fries are crispy and delicious, yet still nutrient dense. Make 'em in your air fryer or oven.

This zucchini fries recipe is the perfect way to use all that summer zucchini!
If you grow zucchini, during the summer you might have a few (or a ton) extra lying around. There are tons of ways to cook zucchini - a classic sauté or even ratatouille. But if you're feeling like something crunchy, these fries are a great idea.
Serve with my garlic parsley aioli as a tasty dipping sauce.

Why I love these Air Fryer Zucchini Fries
- Dietary needs - these fries are vegan, gluten-free, dairy-free, oil-free, and sugar free
- Completely gluten free - you can still enjoy breaded fries even if you're gluten-free. Rice-based breadcrumbs for the win!
- And egg free - most breaded fries or nuggets use an egg to bind the breading to the fry. Flax eggs are the perfect vegan substitute - flax + water gel together to create an egg-like texture. And you also get a serving of fiber and omega-3
- Can be made in the air fryer or oven - the air fryer makes these fries extra crispy, but if you don't have an air fryer you can totally make these fries in the oven.
- Veggie forward - eating fries while eating your veggies?! It's a perfect combo.

Ingredient Notes & Substitutions
- Zucchini: you can use either green zucchini or yellow summer squash
- Flax Eggs: a flax egg is made by mixing ground flaxseeds and water. It creates a gel-like texture that mimics an egg. Ground flaxseeds are usually in the baking aisle - you can also use ground chia seeds.
- Breadcrumbs: I used gluten-free breadcrumbs in this recipe, but regular breadcrumbs, like Panko, will work just fine
- Nutritional Yeast: nutritional yeast adds a cheesy flavor - if you don't like it or can't find it at the store, feel free to omit it
- Dried Rosemary OR Italian Seasoning: choose your favorite
- Garlic Powder
- Salt & Pepper

How to make gluten-free breaded Zucchini Fries
Step 1. Preheat the air fryer or oven to 400°F.
Step 2. In a medium bowl, prepare the flax egg by mixing the ground flaxseed and water. Let sit 5 minutes.
Step 3. In another medium bowl mix the breadcrumbs, nutritional yeast, rosemary, garlic powder, salt, and pepper.

Step 4. Cut the zucchinis in half widthwise, then slice into fries.

Step 5. Working one by one, coat each piece of zucchini in the flax egg, then in the spices.

Step 6. Arrange the fries in a single layer in your air fryer or on a baking sheet.
Step 7. Cook for 15 minutes, or until crispy. Serve with my garlic parsley aioli. Enjoy!

FAQ & Expert Tips
You can use any gluten-free breadcrumbs you like. Or even gluten-free panko. Be sure to check that your panko is vegan and doesn't contain ingredients like eggs or honey - many gluten free breadcrumbs have non-vegan ingredients.
Types of air fryers. There are many types of air fryers out there, so be careful when making this recipe for the first time. You may need to air fry for more or less time.
No air fryer? I give oven instructions too! If you have a convection oven, use that and follow the air fryer instructions instead.
Arrange in a single layer. Whether you're using an air fryer or oven, be sure to arrange the fries in a single layer. You don't want the fries to stick to each other, and you want to give them opportunity to get crispy on all sides.
Store these fries in an air-tight container in the fridge. I don't recommend freezing.
The fries will last up to a week in the refrigerator.
To reheat, simply pop them back in the air fryer or oven at 350 for 5ish minutes, until they are warmed through.
