Sweet Glazed Green Beans are caramely, garlicy, and delicious! Step up your vegetable side dish with these green beans.

One of my favorite recipes before adopting a whole-food, plant-based, oil-free diet was a simple green bean dish with garlic, scallions, and LOTS of olive oil. I loved dousing the beans with salt and enjoying the crispness of the green beans and the addicting garlic flavor. That dish is (mostly) healthy but I decided to create a recipe where I can still enjoy the crisp green beans and bold garlic without the oil.

I've talked a little about oil before and why I try to stay away. First, oil is packed with empty calories and second, it restricts arterial function. In a culture struggling with obesity and heart disease, the last thing we need is something that contributes to both. A little oil here and there won't kill you, but I like to stay oil-free whenever possible.
So. My love of green beans + my avoidance of oil = Sweet Glazed Green Beans. I love math 🙂

Ingredients
This recipe is super simple. Only three ingredients!
- Green Beans: Make sure to buy beans that are a bright green with no brown spots.
- Garlic: Garlic ads a tangy, umami flavor.
- Date Syrup: Date syrup adds a sweet, stickiness. If you can't find date syrup you can sub maple syrup, but the green beans won't be as caramely and sticky.

How to make Sweet Glazed Green Beans
Step 1. Blanch or steam the green beans. Personally, I like to steam green beans because I want to eat them rather undercooked and crunchy. Steaming makes it easier to control the doneness. If you like softer green beans or prefer to blanch, adjust to your preference.
While the beans steam (or blanch) chop up some garlic.
Step 2. When the beans reach your desired level of crispiness, remove them from the heat. Sauté the garlic in a non-stick pan. Use only a tiny bit (teaspoon) of water or veggie broth to sauté.
Step 3. Add the green beans to the pan with the garlic. Add the date syrup to the pan with the garlic and green beans. Toss to coat.
Since the beans are already cooked, all you're really doing is creating a nice glaze with the date syrup. It should only take a minute or two! You will notice the date syrup thickening slightly. When that happens, the beans are done. Serve and enjoy!

Sweet Glazed Green Beans
Ingredients
- 1 Pound Green Beans
- 3 Cloves Garlic
- 2 Tablespoons Date Syrup
Instructions
- Prep and wash the green beans. Steam (or blanch) for 5 minutes, or until they reach your desired level of crispiness.
- Meanwhile chop the garlic into small chunks.
- When the green beans are done remove them from the heat. Add the garlic to a non-stick pan and saute for 30-60 seconds with a teaspoon of water or veggie broth.
- Add the green beans and date syrup to the pan. Toss to combine. Cook until the date syrup starts to thicken, around 2 minutes. Enjoy!
