    Sweet Spicy Vegan Granola

    Well, actually not that long. It just feels super long for me because granola recipes don't require a lot of testing, so it's really easy for me to throw together a recipe and get it on the blog really fast.

    And then I get on a granola kick and make like 5 granola recipes in one week. But of course I can't post only granola recipes for an entire month. So I space them out. And then I don't eat granola until I need another granola recipe on the blog.

    This recipe is the first granola recipe I've made since a 'granola break'. The recipe I posted in January I actually made in September. I had to wait that long to post it because I had another granola recipe that I posted in October, and then the holidays happened, and then I graduated college. So things got busy.

    But anyway. Here I am after a long granola hiatus (for me) and a short granola hiatus (for you) posting this INCREDIBLE recipe.

    Running a blog, it's my job to explain how delicious each of my recipes are. Because you obviously can't tell how they taste just by looking at the pictures. But I am extra serious when I talk about this granola.

    I cannot get over the flavor profile. Of course, like regular granola, it is sticky and sweet and crunchy. But it's got a ton of savory spices in it that create a robust flavor. AND it has a kick of spice that perfectly complements the sweetness.

    I've been trying to solicit more feedback from people that aren't me about my recipes. I brought this Sweet Spicy Vegan Granola to some of my friends and they ate it up so quickly. That's when I know it's a good one.

    Not to mention how much of it I was snacking on as I baked it and photographed it. It took so much self control to not just eat all of it before I got the pictures I needed. Especially those pics where I have a huge chunk in my hand. Huge temptation to just shove that in my mouth. But I resisted for the pretty pictures.

    Gosh, now I want some granola just typing this. Too bad it's all gone now.

    Let's talk ingredients though. Sweet Spicy Vegan Granola is pretty loaded. I threw a bunch of 'superfood' ingredients in it. It's fun to have some different textures and tastes.

    More variety = more nutrition. (And more flavor!)

    Sweet Spicy Vegan Granola

    Ingredients

    • Rolled Oats
    • Pumpkin Seeds
    • Pecans
    • Shredded Coconut
    • Sesame Seeds
    • Spices: Paprika, Turmeric, Garlic Powder, Salt, Cumin, Cayenne, Cloves
    • Date Syrup
    • Maple Syrup
    • Molasses

    Yeah, the list is a bit longer than my other granola recipes, but it's worth it. The savory spices add so much flavor.

    The good news is that despite the longer list of ingredients, it's still very quick and easy to bake the granola.

    How to bake Sweet Spicy Vegan Granola

    Step 1. Preheat your oven and line a baking sheet with parchment paper. Don't leave the parchment paper out. The granola will stick to the pan if you don't use parchment. And that's not fun.

    Step 2. Mix all the dry ingredients together and then add in the date syrup, date sugar, and molasses. Note that if you prefer a granola without any added sugar you can use entirely date syrup. Alternatively, if you don't have date syrup and want to use all maple syrup, you can do that too. Both options work well.

    Step 3. Stir the wet ingredients in until all the oats are coated.

    Step 4. Spread onto the pan and bake.

    ‍Step 5 . After 20 minutes, take the granola out of the oven. It may not seem done at this point, but the secret is that you need to let the pan sit for a few minutes.

    As the granola cools it will get super crunchy. But it won't do this if you try to eat it right away. So be patient!

    After about 10 minutes, the granola might still be warm but it should be crunchy and chunky. Break the chunks apart and enjoy!

    Ingredients

    • 2 Cups Rolled Oats
    • ¼ Cup Pumpkin Seeds
    • ¼ Cup Chopped Pecans
    • ¼ Cup Shredded Coconut
    • 2 Tablespoons Sesame Seeds
    • 1 Teaspoon Paprika
    • 1 Teaspoon Turmeric
    • 1 Teaspoon Garlic Powder
    • 1 Teaspoon Salt
    • ½ Teaspoon Cumin
    • ¼ Teaspoon Cayenne
    • ¼ Teaspoon Cloves
    • ¼ Cup Date Syrup*
    • ¼ Cup Maple Syrup*
    • 2 Tablespoons Molasses

    Instructions

    • Preheat the oven to 300°F. Line a baking sheet with parchment paper.
    • Mix the dry ingredients (and all the spices) in a medium bowl. Add the date syrup, maple syrup, and molasses. Stir until all the oats are coated.
    • Spread the mixture on the prepared pan and bake for 20-35 minutes. Let cool on the pan for 10 minutes before breaking into chunks. Enjoy!

    *You can use all date syrup or all maple syrup and achieve a very similar granola.
