What's so cool about these Valentine's Day Oatmeal Cookies is that we are using plants as food coloring, not chemicals. For the pink cookies we'll use beetroot powder.
And if you'd like to make a purple version of these cookies, you can use maqui powder, which is a beautiful violet color.

St. Valentine
St. Valentine was a priest in Rome. He was martyred on February, 14th in the year 269. There were reportedly a couple other people named Valentine who lived during this time. It is still unknown if these people were all the same or if they were separate people.
Despite this, there are stories of Valentine's great faith. When he was under arrest, he cured the judge's daughter of blindness in the name of Jesus. The judge and his family immediately converted. He set Valentine free and released all other Christian prisoners. Valentine was later arrested again for evangelizing. When Valentine tried to convince the emperor, Claudius, to embrace Christianity, Claudius sentenced him to death. They executed Valentine on February 14th.
We associate Valentine's day with love but this tradition started many years after Valentine's death. A poet, Geoffrey Chaucer, supposedly introduced this celebration with a poem about birds coming together to find a mate.
So, while Valentine is the patron saint of love and other romantic things. This celebration really has nothing to do with him. Kind of sad, right?

Why I love these Valentine's Day Oatmeal Cookies
- Dietary needs - these oatmeal cookies are plant-based, gluten-free, oil-free, and (mostly) sugar-free.
- Whole foods ingredients - no refined sugar here! We use maple syrup and applesauce for sweetness. And no eggs or butter. Just ground flax and nut butter.
- Perfect easy dessert - these cookies are pretty simple. Just because it's Valentine's day, doesn't mean you have to slave over a fancy dessert
- Super quick - you can make these oatmeal cookies in just 25 minutes!
- Pink and more pink - pink cookies AND pink chips. What's not to love?
- Make these cookies any size - I've made these cookies as small as tablespoon size and pretty close to ¼ cup size. They are great at any size

Ingredient Notes & Substitutions
- Rolled Oats: use rolled oats for lovely pieces of oatmeal in your cookies. Quick oats are an okay sub, but the oats tend to disintegrate in cookies like this
- Oat Flour: I love using oat flour in cookies because it's naturally gluten-free and can be made easily at home! Plus, it just makes sense to use oat flour in oatmeal cookies
- Beetroot Powder: Beetroot powder is a natural alternative to food coloring and is what gives the cookies their beautiful pink color. If you'd like to make purple cookies, you can use maqui powder instead. Or omit the powders and opt for some colored candies (see below).
- Cinnamon
- Baking Soda
- Salt
- Unsweetened Applesauce: applesauce helps create a soft cookie, and adds some sweetness and moisture, instead of using oil
- Neutral Nut Butter: I used cashew butter, but any neutral-tasting nut butter like almond butter will work!
- Maple Syrup
- Non-Dairy Milk: if you aren't using the beetroot or maqui powder, you won't need any milk
- Vanilla
- Vegan Chocolate Chips: you can opt for regular vegan chocolate chips. Or, if you like the colorful look you can use vegan, naturally-dyed colored candies

How to make Valentine's Day Oatmeal Cookies
Step 1. Preheat the oven to 350°F. Line two cookie sheets with parchment paper.
Step 2. In a medium bowl mix the rolled oats, oat flour, beetroot powder, cinnamon, baking soda, and salt. Set aside.

Step 3. In a large bowl mix the applesauce, nut butter, maple syrup, non-dairy milk, and vanilla.

Step 4. Add the dry mixture to the wet mixture and mix thoroughly.

Step 5. Stir in the chocolate chips.

Step 6. Scoop into 2-tablespoon portions and arrange on the cookie sheet. Use a wet hand to gently press the cookies flat.
Step 7. Bake for 8-10 minutes. Let cool. Serve and enjoy!

- ¾ Cup + 2 Tablespoons Oat Flour
- 2 Teaspoons Beetroot Powder optional **for purple cookies, use maqui powder instead
- 1 Teaspoon Cinnamon
- ½ Teaspoon Baking Soda
- ¼ Teaspoon Salt
- ½ Cup Unsweetened Applesauce
- ⅓ Cup Neutral Nut Butter like almond or cashew
- ¼ Cup Maple Syrup
- 2 Tablespoons Non-Dairy Milk if not using beetroot powder, omit the milk
- 1 Teaspoon Vanilla
- ½ Cup Vegan Chocolate Chips I used UnReal candies for color
