    Vanilla Sea Salt Coconut Milk

    Slightly sweet with notes of vanilla, this Vanilla Sea Salt Coconut Milk can be used in place of dairy or non-dairy milk in any recipe. Delicious in baked goods, coffee, or by itself!

    A couple weeks ago I posted this Easy Homemade Coconut Milk recipe. I love it because it's so simple. All you have to do is mix canned coconut milk with water. It makes a delicious non-dairy milk option. When I have more time though, I've enjoyed making this Vanilla Sea Salt Coconut Milk.

    Why add vanilla and sea salt?

    By adding vanilla and sea salt we get a depth of flavor that canned coconut milk just can't offer. When I was drinking store-bought non-dairy milk, I loved the 'unsweetened vanilla' versions. They have that delicious vanilla flavor but they don't have any added sugar.

    Sadly, as I've learned recently, there's something in store-bought milks that I can't tolerate. That doesn't mean that I'm going to give up my 'unsweetened vanilla' favorites! I'll just make my own. And you can too!

    Y'all know by now that I won't be adding any sugar to any of my recipes. So to get the 'unsweetened vanilla' flavor, I used vanilla extract.

    As for the sea-salt, you could probably make this recipe without it, but you'll be missing a key flavor. The salt brings out the sweetness of the coconut.

    When was the last time you ate plain coconut? If you haven't recently, grab  yourself a pinch. You'll notice it's pretty sweet. BUT when you blend it up to make coconut milk, you lose a bit of that sweetness. Don't worry though, the sea salt helps bring back that flavor.

    The only other thing you need to make this Vanilla Sea Salt Coconut Milk is water. (And a blender.)

    How to make Vanilla Sea Salt Coconut Milk

    Step 1. Add some coconut flakes, vanilla extract, sea salt, and water to the blender. Blend on high for 30 seconds or so. You'll be left with a bunch of coconut pieces, called coconut pulp.

    Step 2. Use a strainer to separate the liquid milk from the coconut pulp. Depending on the size of the holes in your strainer, you may need to pour the milk through a couple times. I used a tea filter which has really tiny holes.

    Step 3. Place the liquid milk in a jar and store in the fridge for up to a week.

    What do I do with the pulp?

    Don't get rid of the coconut pulp! There are plenty of great things you can do with coconut pulp and unless you're planning to compost the pulp, it's pretty wasteful to just throw all that away. Save the environment people!!

    Ingredients

    • 1 Cup Unsweetened Coconut Flakes
    • 1 Teaspoon Vanilla Extract
    • ¼ Teaspoon Sea Salt
    • 4 Cups Water

    Instructions

    • Add all the ingredients to a blender. Blend on the highest setting for 20-30 seconds. Strain using a strainer or tea filter. Store in the fridge. Enjoy!

      Does it not taste a little salty as coconut flavour is very light and delicate flavour

        It is meant to have that hint of salt, but coconut is naturally sweet as well, so I think it balances nicely. Feel free to reduce or omit the salt if you'd like.
