I've found that organic brown sugar is expensive and hard to find, so I started making my own!
You only need two ingredients for vegan brown sugar: organic granulated sugar and molasses.

What is brown sugar?
Brown sugar is simply white sugar mixed with molasses.
It's stickier and more caramel-like than white sugar.
Because it's so simple, it's incredibly easy to make brown sugar at home. AND make sure it's vegan.

Ingredient Notes
- Organic White Sugar: I love the Zulka brand granulated sugar. Any organic white sugar will work here.
- Molasses: I buy a regular sized jar of molasses and it lasts forever!

Step-by-Step Instructions
Step 1. Add the sugar and molasses to a medium bowl - use a bowl a size or two larger than you'd think, you'll want this room for mixing.

Step 2. Use a fork to stir the molasses into the sugar. Working out the clumps until the molasses is fully incorporated and the sugar takes on a uniform color.
Store in an airtight container at room temperature.



FAQ & Expert Tips
The difference between dark and light brown sugar is the amount of molasses.
When making light brown sugar we use a 1T:1c ratio of molasses to sugar. For dark brown we increase that to 2T:1c.
No. Most white sugar is not vegan. Only organic sugar that is processed without bone char is vegan.
Yes. Organic sugar is processed without bone char, so it is vegan.
No. Cane sugar is closest to white sugar. It does not look like white sugar because cane sugar is generally less processed.
You can always substitute regular sugar for brown sugar. But it will change the flavor of a recipe. Brown sugar is richer and more caramel-like.
A trick I use if I don't have any brown sugar made is to add the equivalent amount of white sugar, and then a dash of molasses. It's not perfect, but a closer substitution to brown sugar.
