Just when I thought I'd never publish another taco recipe on this site (because I have a recipe with just about every type of vegan meat substitute you can imagine) I remembered that you can make tacos with chicken.
Hello!? A whole category of tacos that I haven't even touched.
I created a seitan shredded chicken recipe specifically to go with these tacos, to really get that fine-shredded texture.
Then I went with a my classic taco recipe - onion, protein, and taco seasoning. Super easy. Perfect for a weeknight dinner.

- Yellow Onion: I used a yellow onion, but a white or red onion would both be great
- Vegan Shredded Seitan Chicken: I used my recipe for vegan shredded chicken. You can also use my regular vegan seitan chicken which has a bolder chicken flavor. Or feel free to use any other vegan chicken like soy curls or a store bought chicken product.
- Water
- Taco Seasoning: I always use my homemade 5-minute taco seasoning
- Oregano: a bit of dried oregano gives some freshness and more of a chicken vibe

I used: Tortillas, Lettuce, Tomatoes, Avocado, Cilantro, Lime, and Jalapeño

Step-By-Step Instructions
Step 1. In a non-stick pan over medium heat, cook the onion until just starting to soften.

Step 2. Add the shredded chicken, water, and seasonings to the pan. Toss well and heat for 5 minutes.
