My seitan chorizo is perfect for pasta! It's smoky and flavorful. And when you make the crumble version, it stirs so perfectly into any pasta dish.
This particular recipe is creamy and bursting with flavor. It's similar to my vegan cajun chicken pasta - minimal prep, weeknight friendly, but TONS of flavor.
It's a great dish for when you want something flavorful but super quick!

Ingredient Notes & Substitutions
- Vegan Chorizo: I used my seitan chorizo, which is ready in 30 minutes, and times perfectly with this recipe. For a gluten-free option, try Abbot's chorizo.
- Yellow Onion: a red onion would work fine too
- Penne Pasta: I like penne in this dish because it is easy to get nice bites of chorizo and pasta on your fork. You can use any short pasta like rigatoni, gemelli, or even elbow.
- Smoked Paprika, Salt, Cayenne: to lean into the flavors of chorizo
- Fire Roasted Diced Tomatoes: fire roasted tomatoes aren't really spicy, but they do add a smoky flavor to the dish. Feel free to sub regular diced tomatoes.
- Vegetable Broth: cooking the pasta in vegetable broth adds some extra flavor. Feel free to use water instead.
- Vegan Cream Cheese: to balance out the heat of the cajun seasoning and make a super creamy dish
- Scallions: to serve

Step-By-Step Instructions
Step 1. Prepare the chorizo. If using my seitan chorizo, bake in the oven as directed. If using a store-bought chorizo, pan cook according to the package directions.

Step 2. In a large/deep skillet (or pot if you don't have a large skillet), heat the onion over medium heat. Cook five minutes, until translucent.

Step 3. Add the smoked paprika, salt, cayenne, and toss.

Step 4. Add the broth, tomatoes, and pasta. Bring to boil and cook until pasta is al dente, according to the package directions.

Step 5. Stir in the chicken and cream cheese. Toss well.

Step 6. Serve topped with scallions.

FAQ & Expert Tips
I recommend any short pasta. Shapes like penne, rigatone, rotini, gemelli, etc. will all be great!
Use Abbot's chorizo and a gluten-free pasta.
This pasta will last in the fridge for up to a week. Store in an air-tight container.
Feel free to reheat in the microwave or quickly heat on the stove. You can add a splash of water to help re-hydrate the sauce
