Why I love this Vegan Cream Cheese Frosting

Ingredient Notes
- Vegan Cream Cheese: I like using Miyoko's vegan cream cheese - it is made with whole foods, without any oils or gums.
- Arrowroot Powder: Since the frosting has no butter, it needs to be thickened. Arrowroot powder is a starch that helps thicken the frosting without adding flavor. You can sub cornstarch.
- Maple Syrup: for a refined-sugar free sweetness. You could also use date syrup, but date syrup is dark and will change the color of the frosting.
- Vanilla Extract

How to make refined sugar free vegan cream cheese frosting
Step 1. Using a hand mixer or stand mixer, beat the frosting ingredients until combined and slightly fluffy. Refrigerate until ready to use.

FAQ & Expert Tips
This recipe yields just over 2 cups of frosting. It is enough to frost 12 cupcakes or one 9" cake.
I also use this amount of frosting to ice the tops (but not sides) of my 8" layer cakes.
As with regular cream cheese frosting, this icing should be stored in the fridge. Keep it in an air-tight container or zip-top bag.
If you make cake or cupcakes and plan to frost and serve on a later date, I recommend frosting just before you need to serve. Otherwise, store any frosted cakes or cupcakes in the refrigerator.
This frosting will last in the fridge for a week.

Hi! Super excited to try this recipe out. I would be subbing the arrowroot powder for corn starch, would it be the same measurement or is the ratio going to be different than 1:1? Also, how much cake could this recipe cover?

Hi! Yes arrowroot and cornstarch can be swapped 1:1. This is enough to cover an 8-9" cake. If you are making a cake with two layers you should double the recipe.
