- Carrots: don't use baby carrots for this - full-sized carrots have a much better flavor

- Vegetable Broth: instead of oil, I toss my carrots in vegetable broth to prevent sticking. If you're okay with a bit of oil, feel free to sub in oil 1:1

Step 1. Preheat the oven to 400°F.
Step 2. In a large bowl, toss the carrots, garlic, ¼ cup of maple syrup, vegetable broth, salt, and pepper.

Step 3. Transfer the mixture to a casserole dish or baking sheet lined with parchment paper.

Step 4. Bake for 50-60 minutes, stirring every 20 minutes.

Step 5. Remove from the oven and toss with the remaining two tablespoons of maple syrup.

Step 6. Serve with a garnish of fresh thyme.
