    Ingredient Notes & Substitutions

    • Carrots: don't use baby carrots for this - full-sized carrots have a much better flavor
    • Garlic: garlic helps balance out the sweetness of the syrup
    • Maple Syrup
    • Vegetable Broth: instead of oil, I toss my carrots in vegetable broth to prevent sticking. If you're okay with a bit of oil, feel free to sub in oil 1:1
    • Salt & Pepper
    • Fresh Thyme: for garnish, and a bit of freshness at the end

    Step-By-Step Instructions

    Step 1. Preheat the oven to 400°F.

    Step 2. In a large bowl, toss the carrots, garlic, ¼ cup of maple syrup, vegetable broth, salt, and pepper.

    Step 3. Transfer the mixture to a casserole dish or baking sheet lined with parchment paper.

    Make ahead tips

    1. Carrots can be prepped ahead of time. Peel and chop a day or two ahead of time. Then store in an airtight container (I use a gallon bag).
    2. This dish can be prepared ahead of time and reheated. Cook as instructed, then warm in the oven at 300 for 10-20 minutes right before serving.

    Storage

    Store these carrots in an air-tight container in the fridge for up to 5 days.

    • 1 Tablespoon Vegetable Broth
    • ½ Teaspoon Salt
    • ¼ Teaspoon Pepper
    • Fresh Thyme for garnish
