I love this particular stew because of the lentils! Lentils are absolutely packed with plant-based protein, so you know you are getting a good dose of protein with this dish. Plus, lentils also have tons of fiber, which is helpful for digestion and supports overall gut health (so important!).
Besides the lentils, there are only a few other key ingredients. And the mushrooms are the secondary star of this dish. They have such a beautiful umami flavor that really comes through. No boring stew here!

Ingredient Notes
- Mushrooms: I used cremini mushrooms. I love how flavorful they are! White button mushrooms would work too.
- Yellow Onion: You can sub red or white onion.
- Carrots: the recipe calls for finely chopped carrots, but if you'd like you can leave the carrots in larger chunks.
- Vegetable Broth: be sure to use broth with no added sugar.
- Water
- Green Lentils: these are the lentils that you are most likely to find at the store - they have a brownish color and might just be labeled as "lentils"
- Dried Sage
- Ground Thyme
- Salt

How to make Vegan Mushroom Lentil Stew
Step 1. Sauté the mushrooms, onion, and carrots in a large pot for 5-7 minutes until they are soft. Use a splash of vegetable broth if necessary to prevent sticking.
Step 2. Add the broth, water, lentils, sage and thyme. Bring to a boil then let simmer 20 minutes, until the lentils are cooked.
Step 3. Remove from the heat, serve, and enjoy!

- 16 Ounces Mushrooms sliced
- 1 Medium Yellow Onion finely diced
- 2 Large Carrots finely chopped
- 4 Cups Vegetable Broth
- 2 Cups Water
- 1 ½ Cup Lentils
- 1 Teaspoon Dried Sage
- ½ Teaspoon Ground Thyme
- Salt to taste
Instructions
