    Vegan Peanut Butter Kiss Cookies

    A healthy version of the classic Christmas cookie, these Vegan Peanut Butter Kiss Cookies are filled with good-for-you ingredients -- completely whole food plant based and fruit sweetened. A perfect addition to your Christmas baking.

    Peanut Butter Kiss Cookies are one of my FAVORITE types of cookies. I have so many childhood memories of baking Christmas cookies with my mom, aunt, sister, and cousin. We always made Peanut Butter Kiss Cookies. So, naturally, when I started thinking about Christmas cookies for this year, I knew I needed to make a delicious plant-based version.

    Vegan Peanut Butter Kiss Cookies

    I started testing recipes and eventually came up with these delicious Vegan Peanut Butter Kiss Cookies. Seriously, peanut butter is just the best. I love it.

    I'm calling these cookies kiss cookies, but I'm not actually using kiss chocolates. Those things are loaded with processed sugars and dairy. Instead, I'm using vegan chocolate. You can either use unsweetened chocolate and add maple or date syrup, or you can use a slightly sweetened vegan chocolate.

    Plus, with melted chocolate, you can totally decorate these cookies however you want.

    Vegan Peanut Butter Kiss Cookies

    Ingredient Notes

    • Peanut Butter: make sure you buy unsweetened peanut butter.
    • Date Sugar: Date sugar is dried dates that have been ground up. I love date sugar because it is a fruit sweetener with fiber to help your body process the sugars.
    • Ground Flaxseeds: Flax serves as replacement to the egg. You could also use ground chia seeds.
    • Vanilla Extract
    • Oat Flour: I usually use my homemade oat flour (just blend quick oats in a food processor) but if you want a really smooth cookie, I suggest using store bought oat flour which is very fine compared to homemade which is coarser.
    • Peanut Powder: make sure to buy peanut powder with no added sugar.
    • Baking Soda
    • Salt‍
    • Unsweetened Applesauce: if your peanut butter is very thick and not runny you may need a bit of applesauce to thin out the batter. You could also use a splash of non-dairy milk.
    • Vegan Dark Chocolate: for the topping. You can choose to buy unsweetened chocolate and add date or maple syrup to taste. Or you can buy a slightly sweetened vegan chocolate.

    How to Make Vegan Peanut Butter Kiss Cookies

    Step 1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.

    Step 2. In a large bowl, mix the peanut butter, date sugar, flaxseeds, and vanilla extract until combined.

    Step 3. Add the oat flour, peanut powder, baking soda, and salt. Mix the dough, using your hands if necessary. If the dough is too dry, add the applesauce 1 tablespoon at a time, until you can easily form a ball.

    Step 4. Drop tablespoons of dough onto the prepared baking sheet. Then flatten the cookies with the palm of your hand (they won't spread during baking).

    Step 5. Bake for 8-10 minutes, until the cookies are slightly golden but still soft.

    Step 6. While the cookies are baking, melt your chocolate in the microwave on 50% power. Stir the chocolate every 30 seconds.

    Step 7. Once the cookies are baked, decorate them with the chocolate however you'd like. Enjoy!

    Storage

    Be sure to let the chocolate harden before storing the cookies. The last thing you want is a chocolate mess!

    • ⅔ Cup Unsweetened Peanut Butter
    • ½ Cup Date Sugar
    • 1 Tablespoon Ground Flaxseeds
    • 2 Teaspoons Vanilla Extract
    • ½ + ⅓ Cup Oat Flour
    • ½ Cup Unsweetened Peanut Powder
    • ½ Teaspoon Baking Soda
    • ½ Teaspoon Salt
    • ¼ Cup Unsweetened Applesauce if you need it
    • 2 Ounces Vegan Dark Chocolate
