I grew up eating chicken salad for lunch and I'm just a little bit obsessed with it.
You may have heard of the traditional veganized version of chicken salad, chickpea salad. And the curry chickpea salad version, of course.
But this recipe is for the protein people. I love chickpeas, but they don't have a lot of protein. If you want the PUNCH of protein that meat-based chicken salad has, this vegan seitan chicken salad is for you!

- Vegan Shredded Chicken: this recipe is perfect with my vegan seitan shredded chicken - it's protein packed and shredded into small pieces. If you want a more pronounced chicken flavor or more chunks, head to my classic seitan chicken. For gluten-free use a store bought chicken like Abbot's or soy curls.
- Vegan Mayonnaise: you can use my homemade plant-based mayo to avoid added sugars and oils. If you'd like to use store bought, look for a brand that has minimal ingredients and uses an oil like avocado oil or olive oil
- Grapes: I love the sweetness that grapes add, but you can omit them if you don't want any sweet. You can also use a diced apple
- Celery

For Sandwiches
- Sandwich Bread: I used Dave's seedy bread
- Lettuce or other toppings of choice

Step-By-Step Instructions
Step 1. In a large bowl mix the vegan chicken, mayo, grapes, celery, green onion, mustard, dill, salt & pepper. Stir until the chicken is fully coated.

Step 2. If desired, serve sandwich style between two slices of bread. Enjoy!

Serving Suggestions
My favorite way to enjoy this curry chickpea salad is on sandwich bread. I love Dave's seed bread because it's got whole grains and a bit of extra protein.
Serve with crackers, lettuce wraps, or in pita.

Seitan is a meat substitute made from vital wheat gluten. Various seitan recipes can be made from vital wheat gluten by varying the spices and cooking method.
Vital wheat gluten basically a flour like substance that is primarily protein. This is what makes the chicken so high in protein!

- ¾ Cup Vegan Mayonnaise store bought or my WFPB recipe
- 1 Cup Grapes quartered
- 5 Stalks Celery chopped
- 1 Bunch Green Onions diced
- ¼ Cup Dijon Mustard

- 12 Slices Sandwich Bread of choice
