Ingredient Notes & Substitutions
- Broccoli: you can also make this recipe with cauliflower
- Potatoes: I used Yukon Gold potatoes because I find them to be more flavorful than regular baking potatoes. You can also make this recipe with sweet potatoes, fingerling potatoes, purple potatoes, etc.
- Garlic: I like using sliced garlic instead of minced so that it doesn't fall to the bottom of the pan and get burnt. You can use garlic powder as a sub, but if you have access to and time for fresh, go for fresh
- Paprika: get the most bang for your buck with paprika by buying traditional Hungarian sweet paprika, instead of generic store-bought paprika. Or use smoked paprika.

How to make Vegan Roasted Broccoli and Potatoes
Step 1. Preheat the oven to 450°F. Line a baking sheet with aluminum foil.
Step 2. Arrange the potatoes on the pan and sprinkle with the paprika, salt, and pepper. Cover with aluminum foil and bake 30 minutes.

Step 3. Remove the tray from the oven and add the broccoli and garlic. Bake another 10-15 minutes, until the broccoli is cooked and potatoes are fork-tender.

FAQ & Expert Tips
I usually don't cook with oil - you don't need any! Vegetables like broccoli and potatoes have plenty of natural liquid that will be released in the cooking process.
Make this recipe with sweet potatoes, red potatoes, or purple potatoes. Add some cauliflower or onion to the pan. You can make this dish your own!
